Vegetable Bouillon Cube: Stock Cube with Thermomix



The recipe of Thermomix Vegetable Cube is among most famous Thermomix recipes because it is really useful and very easy to make. This Bouillon Cube , as it is called in the States, or Stock Cube, as it is called in the UK and Australia, is something I was used to buy at the supermarket. But, now, when I discovered this thermomix recipes, I won't by it anymore!!!!

You can also use it as a nice and useful gift!!!!!

I admit that I discovered it for a short time and that I tried it only as a challenge. Actually, a friend of mine told me that he had given up using Thermomix because, after having done the cube (too salty for him), he lost all interest in Thermomix.

Then I told me: why not to try it me too to see why is this vegetable cube done with Thermomix so famous? It was a wonderful discovery!

Now I use this cube in a lot of recipes and I cannot do without it anymore.

I understood my friend’s mistake: you mustn’t taste the cube!!!! It obviously is too salty, otherwise it wouldn’t be a cube!

In comparison with cubes you can buy, not only it has a delicious savour and you can taste each vegetable, but you know what there is within. ;-))))) How many legends (more or less true) I heard about cubes’ ingredients...!

With my home-made cube I have no more this sort of problems!

You can use this vegetable cube in many many recipes. For example to prepare the Spinach Meatballs!!


Ingredients


- 1 Big Coast of Celery
- 1 Carrot
- 1 Onion
- 1 Zucchini (only if it’s its season)In winter you can substitute it with a slice of pumpkin!
- 1 Clove of Garlic
- 20 g Fresh Mushrooms
- Some Leaves of seasonal Aromatic Herbs (Rosemary, Basil, Sage etc.)
- 1 Tuft of Parsley
- 80 g Extravergine Olive Oil
- 200 g Coarse Salt
- 30 g Dry White Wine


How to make Vegetable Cube


Put vegetables, mushrooms and aromatic herbs in the mixing bowl. 10 Sec. Vel.7.

Add salt, oil and wine. Cook with the measuring cup tilted. 20 Min. Temp. Varoma Speed 2.

Blend. 1 Min. Speed. Turbo.

If it results too liquid (as usual, it depends on water coming from vegetables and mushrooms!!) you can thicken for necessary time at Temp. Varoma.


My advices


I freeze Vegetable Cube in small boxes as for Genoese Pesto. So when I need it it’s always ready!

You can store Vegetable Cube in your fridge for three months.

Following the basis recipe book, you can add parmesan. I avoid it, because I use this cube in dishes for people who cannot eat milk.

Tizy, a fan of Italian site Ricette-Bimby, prepared this vegetable cube with vegetables from her garden (as chicory, chard, Sicilian pumpkin, leek, carrot and many spices). She followed basis recipe by adding some more salt to extend its conservation.What a wonderful idea!
