The Fresh Fruit Cake is a classic. People always like it and it's one of the best cakes in the world!
I can say without any doubt that this is the queen of cakes: fresh, colourful, beautiful, light, delicious and healthy (especially if you use seasonal fruit). Moreover it's very easy to make, especially if Thermomix is with you :-)
The recipe has been sent by Gabriella from Marano sul Panaro (MO - Italy), and it's my favourite home-made cake when I have lots of fruit because it reminds me of my childhood afternoons when I used to watch my mum preparing this cake :-)

Ingredients - 8 to 10 People Serving
- 6 Eggs
- 250 g Sugar
- 250 g Plain Flour
- 250 g Vegetable Oil (sunflower seeds)
- 1 Baking Powder Sachet (15 g)
- 1 Lemon Zest
- 1 Peaches is Syrup Can
- Mix Fruit
- Food Gelatine
How to prepare the Fresh Fruit Cake
Put sugar and the lemon zest in the bowl. 5 Sec. Speed 7.
Add eggs, flour, oil and baking powder. 2 Min. Speed 5.
Pour this mixture in a baking pan and cook in pre-heated oven at 180°C 30-40 Min.
Take out of the oven and let cool.
When cold, sprinkle the surface with the peaches syrup. Place the fresh fruit on the surface and decorate as you prefer.
Then cover the cake with the food gelatine, so that it can't turn brown.
Keep refrigerated for about 2 hours before serving.
If you like, you may also cut the cake in half horizontally and fill in with Thermomix Custard ;-)
