Thanks to this recipe Potatoes and Aubergines can create some yummy Croquettes! This particular recipe involves Red Potatoes.

"Watching the 'Cloudy with a chance of meatballs' movie I got soooooo hungry! Luckily I have my Thermomix and I can prepare everything that occurs to my mind....here I am with my recipe".
- 500 g Red Potatoes
- 400 g Aubergines
- 1 Smoked Scamorza Cheese
- Parsley (or Basil if seasonal)
- 3-4 Grated Parmesan Cheese Full Spoons
- 1 Egg
- Black Pepper (if you like it)
- Bread-Crumbs (better if it's made from stale bread)
How to prepare the Red Potatoes and Aubergines Croquettes
Cook potatoes with their zest. About 40 Min. Temp. Varoma (it depends on the potatoes size). Put aside.
Cook aubergines (it depends on their size too). About 40 min. Temp. Varoma.
Let cool then peel potatoes.
Put aubergines in a colander and let drain. You should queeze them with your hands when they are cold.
Cut potatoes and aubergines into dice.
When everything is cold, put it in the Thermomix bowl.
Add a pinch of salt, parsley or basil, egg and parmesan cheese. About 1 Min. Speed 4.
Check if it's well amalgamated.
Shape into small balls or ovals.
Put a small piece of smoked scamorza cheese into every ball.
Cover with breadcrumbs.
Fry them in vegetable oil (to keep their lightness) or with olive oil, as you prefer.
When lightly brown, stop cooking them and serve.
