Cream of Carrot Soup with Thermomix



When you fancy a very quick dish (that is very good too :-)) you can prepare a delicious Cream of Carrot Soup.

A hot soup is the perfect dish to warm yourself in a cold day. This Cream of Carrot is really tempting, soft and light that it makes you ask for seconds :-)

It's a very easy recipe, you just need to put all the ingredients in the bowl and Thermomix makes everything! Moreover it is very healthy too because carrot is a very rich in vitamins and mineral salts vegetable. It is particularly rich in vitamin A that has got lots of benefits for our skin with anti-aging effect.

The recipe has been sent by Silvia from Milan, a fan of Ricette Bimby (the Italian version of this website) who got inspired by a cream of peas she had found on a Spanish cooking magazine when she lived in Spain: "I adapted it for Thermomix and tried it with many different vegetables, but my daughters particularly love this carrot version".

Ingredients


- 1 Onion (or a leek, as you prefer)
- 30 g Extra-Virgin Olive Oil
- 500 g Carrots
- 1/2 L Chicken Stock


How to prepare the Cream of Carrot Soup


Put oil and onion in the bowl and grind. 4 Sec. Speed 4.

Then cook. 3 Min. 100°C Speed 1.

Add carrots cut into pieces and grind. 4 Sec. Speed 5.

Let brown. 7 Min. Temp. Varoma Speed 3.

Add hot stock and cook. 5 Min. Temp. Varoma Speed 3.

Let get cold a little bit and then blend it all. 3 Min. Speed 7.

Pour into dishes and serve with grated parmesan cheese.


Silvia's advice


Using carrots and pumpkin is very good or using a mix of green vegetables (last week I made it with savoy cabbage, chard, peas and celery).


My Advice


Try serving the Cream of Carrot Soup with a tablespoon of Greek yogurt, a bit of spring onion and a drizzle of olive oil. If you like you can also add some croutons fried in butter. Just let me know. ;-)
