Stuffed Aubergine Rolls with Thermomix

Here is a delicious recipe for some yummy Eggplant Rolls stuffed with Meat.

The Varoma cooking makes this recipe very light. You can also dress the rolls with some tomato sauce if you like!

This recipe has been sent by Valeria from Rome. She said: "It is a very quick recipe, suitable for kids too because meat remains soft. Moreover kids can eat greens too".

If you like aubergines and you also want to eat them during winter, you may prepare these Pickled Aubergines during summer!

While if you are looking for a vegetarian recipe with aubergines, you must try the Parmigiana Aubergines.

Valeria's advice

My three-year old daughter liked these rolls very much served with the Thermomix Mashed Potatoes.

Katia's advice

Katia De Girolamo, an Italian fan of the Italian version of this website suggests: "Cook the aubergine slices in the Varoma tray for about 10 minutes. They will become softer and easier to roll up; if uncooked they tend to break".

Mariateresa's advice for lactose intolerant people

Add an aubergine cut into cubes and cooked for 10 Min with a bit of oil. Mix it and add it to the ground meat. It makes the aubergine filling creamier and tastier if you can't add the parmesan cheese.
