I must say the idea for this Gorgonzola Cheese, Zucchini and Tomato Pasta Sauce was born during the -short- period in which Italy played in the South African World Cup. It is an Italian "tricolour" recipe actually.
I tried to support my country, at least in cooking.
Anyway, apart from the world cup this first dish is very yummy! I love gorgonzola cheese (have you tried the mini pizzas with gorgonzola cheese and cherry tomato?) but dressing pasta with it may be heavy. That is why I created this gorgonzola based sauce to lighten the strong taste of this cheese.
Fried zucchini give crunchiness and a strong flavour to the dish. To give freshness I used some tomatoes to garnish.
To eat this pasta I suggest you create the "perfect bite" Barbara Streisand and Jeff Bridges talk about in "The Mirror Has Two Faces" romance film. They were talking about salad and I thought of it about a first dish. So to taste this Gorgonzola Cheese, Zucchini and Tomato Pasta Sauce deeply you should put a piece of pasta (I used penne), a zucchini and a piece of tomato together in your fork. It will melt in your mouth!

- 1 Tomato
for the Gorgonzola cheese sauce
- 100 g Milk
- 15 g Plain Flour
- 15 g Water
- 150 g Gorgonzola Cheese
How to prepare the Gorgonzola Cheese, Zucchini and Tomato Pasta Sauce
Cut zucchini into very thin slices and fry in abundant olive oil. Salt and put aside.
Prepare the gorgonzola cheese sauce.
Put milk in the bowl. 2 Min. 100°C Speed Gentle Stirring (it doesn't matter if it does not reach 100°C).
Add flour and water. 2 Min. 100°C Speed Gentle Stirring.
Add gorgonzola cheese. 4 Min. 100°C Speed Gentle Stirring.
Mix. 10 Sec. Speed 7.
Once you drain pasta, put it in the bowl with this sauce and amalgamate. 20 Sec. Reverse. Speed Gentle Stirring.
Serve pasta in every single dish and put fried zucchini on each one.
Garnish the dish sides with thin slices of tomato.
