Coconut Biscuits with Thermomix: All the Recipes to Prepare Them



Coconut Biscuits are perfect when some guests at the very last time.

You just have to turn on your Thermomix, the oven and in a few minutes your kitchen will smell like coconut :) Then you'll just have to eat these delicious biscuits, if your guests will leave some for you ;-)

In this article I'm posting all the numerous recipes I've received from the followers of the Italian website Ricette-Bimby.com: I added Mimma, Erika from Castelfranco Emilia (MO), Fabiana di Nesso (CO) and Giusy from Foggia's recipes (who all sent the same one), Antonella's from Vittoria (RG) and Francesca's from Mazara Del Vallo (TP) recipes. Coconut is a very rich in potassium fruit, perfect to re-integrate mineral salts you lost during a hot summer day. But pay attention to its consumption (especially those who are dieting) because coconut also contains many proteins and fats.

This biscuits are recommended to those who have intolerance problems: almost all the recipes (except for the 4th one that involves ricotta) can be prepared without milk. Also who is gluten intolerant can enjoy these delicacies just using coconut flour and substitute the normal flour with a gluten-free one.

Moreover, coconut biscuits are made with egg-whites: have you ever asked yourself what to do with those egg-whites leftover from other cakes preparation? Well, now you got the answer :-) By the way, if you have any problem at whipping them, here you are some suggestions on how to whip egg-whites into stiff peaks with Thermomix.

Recipe 1
This recipe has been sent by Mimma.


Ingredients


- 1 Egg White
- 75 g Sugar
- 115 g Coconut Flour


How to Prepare the Coconut Biscuits


Put the egg white, the sugar and the coconut flour in the bowl. 1 Min. Speed 3.

Spoon the dough on a baking tray covered with greaseproof paper.

Cook into pre-heated oven for 20 Min. at 180°C.

Take them out of the oven and let them get cold before pulling them off.


Recipe 2: Coconut "Ugly but Good" Biscuits
This recipe has been sent by Erika from Castelfranco Emilia (MO)


Ingredients


- 200 g Coconut Flour
- 100 g Sugar
- 3 Egg-Whites


How to Prepare the Coconut Biscuits


Turn on the oven at 200°C.

Put coconut flour and sugar in the bowl. 20/30 Sec. Speed 7.

Put the dough aside, wash the bowl and dry it well.

Insert the butterfly, put the three egg whites and whip 3/4 Min. 37°C Speed 4.

Do not remove the butterfly and add coconut and sugar mixture. 20 Sec. Speed 4.

Spoon on a baking tray covered with greaseproof paper with a reasonable distance between each other.

Decrease temperature to 150°C and cook for 30/40 Min.

Recipe 3
This is Fabiana's recipe from Nesso (CO) and Giusy's recipe from Foggia.


Ingredients


- 170 g Desiccated Coconut
- 2 measuring cups Sugar
- 40 g Flour
- 2 Eggs
- a pinch Salt


How to Prepare the Coconut Biscuits


Put coconut, sugar, flour, eggs and salt in the bowl. 10 Sec. Speed 4 stirring with the spatula.

Shape the dough into walnut size balls.

Put them on a baking tray covered with greaseproof paper.

Flatten them a little bit and scratch with a fork.

Bake at 140°C for 10 Min.

Take them out of the oven and let them get cold before pulling them off.


Recipe 4: Coconut Small Balls
This recipe has been sent by Antonella from Vittoria (RG)


Ingredients


- 500 g Ricotta
- 2 Tbsp Sugar
- 300 g Dark Chocolate
- 250 g Coconut Flour


How to Prepare the Coconut Biscuits


Put chocolate in the mixing bowl and grind. 20 Sec. Speed 8.

Add ricotta and sugar. 30 Sec. Speed 5/6.

Shape the dough into small balls, cover with coconut flour and keep refrigerated.


Recipe 5
This recipe has been sent by Francesca from Mazara Del Vallo (TP)


Ingredients


- 4 Egg-Whites
- 150 g Sugar
- 200 g Coconut Flour
- 1 tsp Baking Powder


How to Prepare the Coconut Biscuits


Whip egg-whites into stiff peaks.

Add sugar. 1 Min. Speed 7 and add coconut flour while the knives are moving. Baking powder at the end.

Shape this dough into small balls, cover with coconut flour and put into small paper cup.

Bake for 10 Min. at 180°C.


Erika's from Castelfranco Emilia (MO) advice
To have softer biscuits, preserve them in a hermetically closed tin.


My advice


Add some chocolate drops if you want to make them tastier :-)
