I love zucchini very much! They are very cheap and very easy to find especially in summer. I feel so lucky when a friend of mine brings me some fresh zucchini from her homegrown garden! :-))))
So when I've read a recipe by Simona Dall'Oro on the Italian Facebook page of this website (English here) to prepare a zucchini pesto I immediately was curious. I've taken the recipe and I re-adapted it according to my taste, especially for quantities.
I prepared a very very good zucchini pesto! My husband and my children tried to guess the hidden ingredients of the recipe. Good, tasty and quick to prepare. A very summery recipe to dress pasta.
As my aunt suggested, this is an all-in-one dish!

- 300 g Zucchini
- 40 g Parmesan Cheese
- 20 g Pine Nuts
- 1 Garlic Clove
- 30 g Basil
- 50 g Olive Oil
- 100 g Milk
- Salt to taste
How to prepare the Zucchini Pesto
Put pine nuts and parmesan cheese in the bowl. 8 Sec. Speed 8. Put aside.
Put garlic and basil in the bowl. 2 Sec. Speed 7.
Add zucchini cut into rounds. 5 Sec. Speed 4.
Add oil. 4 Min. 100°C Speed 1.
Add milk and salt. 6 Min. 100°C Speed 1.
Wait until temperature goes down to 80°C and mix. 15 Sec. Speed 8.
Add the mixture of pine nuts and parmesan cheese and mix. 15 Sec. Speed 8.
