Prune Cake with Thermomix



This Prune Cake is what I was looking for! If you like prunes I bet you'll fell in love with this cake too!

It is the perfect delightful cake you must treat yourself with every afternoon. Try preparing it and serving it together with a a fruity tea, it is divine!

It has got the classic plum cake consistency as it is made with flour, eggs, butter, sugar and milk but it is enriched by prunes, known also as dried plums.

Prunes are a very good source of antioxidants, they contain potassium and Vitamin A in the form of beta-carotene, very important substances for our body's health. Thanks to these substances, prunes help preventing lots of diseases. They normalize blood sugar levels, help your regularity, lower cholesterol and protect your intestine. I realise not everyone likes this kind of dried fruit. In fact prunes are very very sweet and their appearance is not that good, I'd say. Children may not like them...but I think once a week at least we could prepare something that is only for us, mums :-) We deserve it, don't we?

I've prepared this cake very recently, as I received it. I was so curious to try it and I made it for a Sunday lunch at my mother-in-law. Everyone loved it with coffee at the end of the meal. I've done just like the authoress of the recipe has suggested. Here you are what Ruth Voo from Malaysia (Kota kinabalu, Sabah) wrote: "This is a very special recipe in our place because you can't buy and have it so nice, fresh come out from oven. Everyone of here like it, I do it three or four times a week for my family breakfast and tea time. I love to serve it with coffee."

Well I can confirm that, it is absolutely great with coffee! :-)

Ingredients

8 people serving

- 140 g Sugar
- 230 g Prunes
- 230 g Flour
- 10 g Baking Powder
- 10 g Soda Bicarbonate
- 250 g Salted Butter
- 4 Eggs
- 150 g Fresh Milk

How to prepare the Prune Cake

Put sugar into the mixing bowl. 1 Min. Speed Turbo. Take out.

Put in prunes. 5 Sec. Speed 5. Take out.

Now mix sugar and butter. 2 Min. Speed 3.

Add in the eggs, one by one. Also add in milk, flour and lastly prunes. Mix well. 2 Min. Speed 4.

Pre-heat oven with 200°C for 10 Min. then bake at 170°C for 30/40 Min.


My advice

Spread with icing sugar at the end if you like :-)
