Thermomix Chocolate and Banana Cupcakes Recipe


I think cupcakes are absolutely delicious especially these Chocolate and Banana Cupcakes! They are very pretty and tasty at the same time and I love preparing them even if they are not traditionally Italian cuisine delis.

Wikipedia claims they are also called fairy cake in British English or patty cake in Australian English but I'm wondering, are these really the same things? Please tell me I'm curious :)

Single portion treats cooked inside paper cups and cover by a wavy icing or a simple icing. Irresistible...especially to children! We don't know so much about their history but their recipe has been printed at the end of the XVIII century.

Cupcakes are also very good present ideas. I've prepared them and put them inside home-made paper boxes. Boxes were a little bit rustic but I've made them with all my love. They are also good if you need someone to forgive you!

This recipe has been sent by Erica Viola who has personally adapted the recipe for Thermomix. She claims they are fabulous. Ingredients

24 small cupcakes

- 400 gr Caster Sugar
- 245 gr Plain Flour
- 75 gr Unsweetened Cocoa Powder
- 1/2 tsp Baking Powder
- 1/2 tsp Soda Bicarbonate
- 1/2 tsp Salt
- 2 Large Eggs
- 2 Bananas, medium size, ripen, mashed
- 240 ml Water
- 120 ml Milk
- 120 gr Vegetable Oil
- 1/2 tsp Pure Vanilla Extract

For the buttercream icing
- 230 gr Icing Sugar
- 113 gr Un-salted Butter, room temperature
- 1 tsp Pure Vanilla Extract

How to Prepare the Thermomix Chocolate and Banana Cupcakes Recipe

Pre-heat the oven at 180°C, putting the grid in the middle of the oven.

Prepare 24 paper cups.

Mix sugar, flour, cocoa powder, baking powder, bicarbonate and salt inside a large bowl.

Put eggs and bananas in the bowl and close the lid. Place the measuring cup in its place. 30 Sec. Speed 3.

While the knives are moving at Speed 3, pour water, milk, oil and vanilla extract through the lid.

Add the dry ingredients in small stages. Keep stirring at Speed 3/4 until well amalgamated.
Pour this mixture inside the paper cups. Do not fill them entirely, fill for 3/4 of the paper cups.
Bake for about 20 Min. Check the cooking using a toothpick.

Let them get cold before covering with the buttercream icing.

Prepare the buttercream icing. Put butter inside the bowl and mix at Speed 3 until creamy. Add 1 spoon sugar at a time from the lid hole and the vanilla extract. 1 Min. Speed 3 or until it gets to the right consistency.

Use this buttercream in a piping bag to garnish your cupcakes.


My advice

You can sprinkle the cupcakes with some colorful or one-colour sprinkles. Children love them!!!!:-)
