I think we all should vary our menu everyday, that is why I like preparing different cereals like spelt, quinoa or oat instead of classic pasta or rice which, as an Italian, are the main cooked ones on a daily basis.
As I said, I like experimenting, but first of all I start preparing new things in simple way because all I want to taste is the new thing I am cooking. A few days ago I bought some quinoa and I did not know what to prepare with it.
Then I found some very interesting recipes, but I decided to prepare the simplest one, maybe because its tomatoes and its parsley reminded me of the Italian cuisine taste.

Quinoa is a pseudocereal rather than a true cereal because it is not part of the grass family. It is more related to beets and spinach. Its nutrient composition is very good compared with common cereals as it contains essential amino acids and good quantities of calcium, phosphorus and iron so that it is a fantastic alternative to pasta and rice.
My children also loved this salad as it is a great alternative to pasta or rice in these hot summer days. It is also a good lunch box idea or a great dish to bring with you for a day at the sea or mountain.

Ingredients- 200 g Quinoa
- Small bunch of Parsley
- 2 Tomato, deseeded
- 700 g Water
- 1 Lemon, juice of it
- Salt and Pepper
- Olive Oil
How to prepare Thermomix Quinoa SaladPlace Quinoa in steaming basket and rinse quickly under cold water.
Add water to TM bowl, place basket into water and cook for 18 Min. 100°C Speed 4.
Once cooked place in a bowl and allow to cool.
Cut tomatoes in half (depending on size) add parsely to TM bowl and set dial to closed lid position and pulse on turbo for 2-3 Sec.
Add this mixture to cool quinoa and dress with olive oil, juice of one lemon, salt and pepper to taste and toss.
