Thermomix Hamburger Buns

Would you like to prepare your own home-made Hamburger Buns? You will be able to do them with your Thermomix, just like the bought ones!

Personally I am tired of eating that junk food sold in every supermarket, bar and fast food and moreover I can't stand giving this stuff to my children! They are attracted by this kind of food, like every kid is, but I, as a mother, I want to make them happy without letting them eating dangerous food.

These recipes are fundamental for every Thermomix owners, a must-do in every kitchen. Once I tried the first of these two recipes, I thought it was perfect! I also made my own Hamburger Steaks, Mayonnaise and Tomato Ketchup Sauce and organised a stunning barbecue on Sunday morning. Everyone loved it! :-)

Recipe 1

Ingredients

- 120 g Milk
- 50 g Water
- 10 g Fresh Yeast
- 30 g Margarine
- 10 g Sugar
- 330 g Plain Flour
- 5 g Salt
- Sesame


How to prepare Thermomix Hamburger Buns

Put milk, water, yeast, margarine and sugar in the TM bowl and warm for 1 Min. 37°C Speed 2.

Mix for 4 Sec. Speed 4.

Add flour and salt. Proceed for 35 Sec. Speed 5.

Knead for 2 Min.

Transfer the dough into a big bowl, cover with plastic film and let it rise for 1 hour.

Divide it into 6 pieces. Roll them nicely with your hands and press them on the top very lightly.

Brush them over with a little water. Put sesame seeds in a plate. Get each roll and press them over the sesame seeds gently so that they would stick nicely.

Place them on the baking tray (which is covered with wax paper). Let them rise again for another 1 hour.

Bake them in preheated oven (200°C) for 12-15 Min.

After taking them out, cover them with a clean cloth or towel and let them rest for a while.

Ingredients

- 1 tsp Granulated Sugar
- 400 g Strong White or Wholemeal Flour (or half & half)
- 1 tsp Salt
- 30 g Fresh Yeast or 2 tsp Instant Yeast
- 200 g Warm Water
- 50 g Olive Oil


How to prepare Thermomix Hamburger Buns

Place all ingredients into the bowl of the Thermomix. Mix 6 - 20 Sec. Speed 3 until the dough has formed into a ball that begins to clean the sides of the bowl. If too dry, add a little more water (common with organic flours).

Knead 1-2 Min Dough Mode.

Tip Thermomix bowl upside down on greased baking tray. Loosen blades by undoing the blade unit at the base. The weight of the blades will help the dough to drop out of the bowl onto the baking tray. Pull any remaining bits of dough off the blades and out of the bowl.

Form into 6 flattened round balls. Lightly oil the top of the buns.

Cover with a clean tea towel and leave in a warm place to rise until doubled in size.

On a folded tea towel or chef's pad on top of the simmering plate of the Aga is a perfect place. A warm airing cupboard also works well.

For Aga owners: 2, 3, and 4 oven: Bake loaf on rack sitting on the floor in the Roasting Oven for 20 minutes. If loaf or rolls are browning too quickly, slide cold plain shelf onto runners near the top of the oven so there is a 3" (8 cm) gap above them. Turn the pan if necessary to prevent too much browning at the back of the oven.

Bake rolls 10 - 12 Min. in the same place in the Roasting Oven (no cold plain shelf required).

Conventional Oven: Bake at 220°C/425˚F/Gas 7 for 10 - 15 Min.


Janie's Tip

Chef's Option: brush rolls with milk and sprinkle with sesame seeds before baking if desired.
