Here's a light and delicate Thermomix Risotto Recipe. Saffron and Zucchini Risotto is a great main course that has a beautiful texture and flavour, but won't make you feel too guilty if you have an extra scoop :-)
It also has a great visual effect, which is always a plus if you make it for guests!
I read somewhere that zucchini, besides having nearly no calories, are also a good help to release stress... I wonder if that's true! Ingredients(serves about 4)
- 1 Shallot
- 200 gr Zucchini, cubed
- 80 gr Extra Vergin Olive Oil
- 320 gr Rice
- 100 gr White Wine
- 900 gr Water
- 1 tbsp Thermomix Stock Cube
- salt to taste
- 2 gr Saffron
- 80 gr Parmesan Cheese, grated
Let's make our Zucchini and Saffron RisottoFirst of all, soak the Saffron in about 50 gr of very hot water, cover and put aside.
Place shallot in the bowl. 3 Sec. Speed 7.
Add olive oil. 3 Min. 100° Speed 1.
Add zucchini.3 Min. 100° Reverse Speed Soft.
Add rice. 3 Min. 100° Reverse Speed Soft.
Add wine and let it evaporate. 1 Min. 100° Reverse Speed Soft.
Add 850 gr of water, the stock cube and a pinch of salt.
Add the saffron. Cook for the time indicated on the rice packet 100° Reverse Speed Soft.
Pour in a serving dish and add Parmesan.
My AdviceIf you have the zucchini flowers you can use them for decoration.
If you like, you can add one or two small basil leaves for the nice smell.
