Pumpkin Croquette with Thermomix

Reading Tania's blog, Dulcis in Furno, I found a Pumpkin Croquette recipe. Very tasty and easy: Pumpkin, Cream Cheese and Flour. A real delicacy.

I had a pumpkin cream ready and for lunch I prepared these croquettes very quickly. I can assure you I had lots of difficulties at making the picture because my little daughter caught and ate them one after the other! I don't know how I could make the picture...My elder daughter took a lot of them too and ate them in a flash!

What can I say? Very good Tania! I changed the quantities just a little because I love pumpkin so I put a lot of it. I also replaced the robiola cheese she suggests with the philadelphia cheese I had in my fridge. They're so yummy that I can't talk about them anymore or I'll make them soon again....


Ingredients


- 120 g Pumpkin
- 1/2 Onion
- 20 g Olive Oil + as much as needed to fry
- 120 g Cream Cheese (like Philadelphia Cheese or Robiola Cheese)
- 50 g Flour + as much as needed to cover with flour
- Salt to taste
- Black Pepper to taste


How to prepare the Pumpkin Croquettes


Peel and cut pumpkin into pieces. Put aside.

Add the onion into the mixing bowl. 3 Sec. Speed 7.

Add oil and the pumpkin in pieces. 20 Min. 100°C Speed 1.

Then blend. 10 Sec. Speed 7.

To give this pumpkin cream more thickness, use the Varoma temperature. Cooking time depends on how much water your pumpkin releases. I cooked 10 Min. Temp. Varoma Speed 1. It must be very thick.

Let cool. Then add salt, pepper, flour and the cream cheese. 20 Sec. Speed 3.

You will obtain a very soft mixture. With the help of a spoon pull off little pieces of the mixture and drop them into the flour.

Place croquettes in hot oil and fry until golden.


My Advice


When the mixture is ready you must make the croquettes. It's a delicate moment because you must dirt your hands. You may get the impression that you won't be successful because these balls are very very creamy before becoming croquettes. But once fried, they reach the perfect crunchiness.

You can serve them either as side dish or as finger food.
