Basic Custard Ice Cream Recipe with Thermomix



Do your children have an insatiable appetite for Custard Ice Cream like mine? Using this Thermomix recipe you won't need to buy an ice cream machine. You control the ingredients by yourself and savour is great!


Ingredients

- 250 gr Full Cream Milk
- 250 gr Cream
- 150 gr Sugar
- 2 Yolks
- Tbs Vanilla Sugar
- 1 Pinch of salt
- Cinnamon (powder or stick)


Let's cook!

Put milk, cream, sugar, yolks, salt and Vanilla Sugar in the mixing bowl. 6 Min. 80°C Speed 3.

Pour the mixture in a rectangular pan and put the cinnamon stick on it. If you only have cinnamon in powder, add just a pinch (with no exaggeration). Let it cool at room temperature.

When the mixture is cool, take off the cinnamon stick. If you added cinnamon in powder you don't need to take it off (if it's just a little bit.....).

Cover the baking pan with aluminium paper and put it in the freezer for 12 hours.

Move it out from the freezer, cut it in big pieces and put it in the mixing bowl and make creamy. 10 Sec. Speed 6 and 10 Sec. Speed 4.

Put ice cream in the freezer again for half an hour and then serve.

If you don't eat all the ice cream at one time, you can put it in the freezer again without any kind of problem. When you want to eat it again you won't need to mix it.


Tips

If ice cream is too much watery, add natural thickener during cooking, like agar-agar or Pregel.
