White Mushrooms Crêpes are a well-known French delicacy, and with Thermomix their tricky preparation becomes fun and easy.

Ingredients


For the filling
- 500 g white mushrooms
- 1 sprig of parsley
- 1 clove of garlic
- 40 g extra virgin olive oil
- 25 g white wine
- 500 g whole milk
- 40 g corn starch
- 40 g unsalted butter
- 1 tsp of salt
- 250 g cooking cream
- Parmesan cheese to taste


For the crêpes
- 40 g unsalted butter (+ to taste for frying)
- 500 g whole milk
- 200 g water
- 250 g plain flour
- 4 eggs
- 1 pinch of salt


Let's cook

Prepare the filling: with a damp cloth, clean 500 g white mushrooms from soil residues and cut them into small pieces.

Insert the parsley and a clove of garlic into the mixing bowl and chop 5 Sec. Speed 7.

Put 40 g extra virgin olive oil in the mixing bowl and fry 3 Min. 120C Speed 1.

Add the sliced mushrooms and cook 10 Min. 100C Speed 1.

Pour 25 g white wine and blend for 10 Min. Varoma Temp. Speed 1.

Set some mushrooms aside for the final garnish.

Blend the mushrooms 10 Sec. Speed 7. Set aside.

Make the béchamel.

Without washing the mixing bowl, add 40 g unsalted butter and melt 3 Min. 100C Speed 1.

Add 40 g corn starch and amalgam 3 Min. 100C Speed 1.

Add 500 g whole milk and a tsp salt and cook 6 Min. 90C Speed 4.

Add the blended mushrooms and 250cooking cream and mix 20 Sec. Speed 3. Set the filling aside.

Without washing the mixing bowl, but simply cleaning well with the spatula, prepare the dough for the crêpes.

Put 40 g unsalted butter in the mixing bowl and melt 2 Min. 70C Speed 2.

Add 500 g whole milk, 200 g water, 250 g flour, 4 eggs, 1 pinch of salt and blend 20 Sec. Speed 4. Let it rest for half an hour.

Fry the crêpes in a 22 cm diameter pan with butter.

Add a little mixture to each crêpes. Close in a triangle and place in a baking dish.

Put the mushrooms kept aside on the surface and sprinkle everything with Parmesan cheese.

Before serving, put in the oven for 10 Min. 180C.

Tips


You may prepare these White Mushrooms Crêpes the day before you need them so that you will simply have to heat them a little before serving.

If you don't have cornstarch to make bechamel, you can use flour instead.

You can add pepper and nutmeg to your liking in the bechamel.
