Champignon Mushrooms Crêpes with Thermomix

Champignons Mushrooms Crêpes are a well-known French delicacy, and with Thermomix their tricky preparation becomes fun and easy.

For the Savoury Crêpes
- 500 g Milk
- 200 g Flour
- 40 g Butter
- 4 Eggs
- 1 Pinch Salt
- Olive Oil to fry

For the Filling
- 500 g Champignon Mushrooms
- 1 Parsley Posy
- 1 Garlic Clove
- 40 g Olive Oil
- 50 g White Wine
- 250 g Heavy Cream
- 500 g Milk
- 200 g Flour
- 40 g Butter
- 1 Tablespoon Salt
- Parmigiano Reggiano Cheese to dust

How to prepare the Champignon Mushrooms Crêpes

Follow the savoury crepes recipe on the basic cook book (same as the sweet ones, just leave the sugar out). Allow to rest for 1/2 hour.

Fry the crepes in a pan with olive oil.

Prepare the filling.

Wash mushrooms with water and cut in pieces.

Put garlic and parsley in the mixing bowl. 5 Sec. Speed 7.

Add oil and the mushrooms. 10 Min. 100°C Counter Clockwise Speed Gentle Stir.

Pour wine. 10 Min. 100°C Counter Clockwise Speed Gentle Stir.

Then cook at Varoma Temp. for the requested time until water completely evaporates. It depends on how much water mushrooms release.

Leave some mushrooms aside for the final decoration.

Mash the rest of the mushrooms you left in the Thermomix bowl. 10 Sec. Speed 7. Put aside.

Prepare the Béchamel sauce.

Put milk, flour, butter and salt in the mixing bowl. 6 Min. 90°C Speed 4.

Add the mushrooms mashed before and the heavy cream. 20 Sec. Speed 3.

Add some of this batter in every crêpe. Fold them over and shape as triangles. Place in an oven dish.

Garnish with the mushrooms you have left aside and sprinkle with parmigiano reggiano cheese.

Bake in the oven before serving for about 10 Minutes at a 180°C temperature.

My Advice
