Squids and Mushrooms Risotto with Thermomix



This Thermomix recipe for the Squids and King Trumpet Mushrooms Risotto is so tasty!

The king trumpet mushroom name is "Pleuròtus eryngii" but in Sardinian language it is called as "cardolinu de petza" and "antunna". Obviously it is less famous then the classic Champignon, but it's worth tasting it!

You can find king trumpet mushrooms fresh or even frozen.

Ingredients


- 1 Garlic Clove
- 1 Parsley Sprig
- 2 Fresh Squids
- Chilli Pepper to taste
- Salt to taste
- 5 King Trumpet Mushrooms large-medium size
- 40 g Oil
- 2 Glasses Hot Water
- 300 g Rice
- Wine (optional)


How to prepare the Squids and Mushrooms Risotto


Put garlic and parsley in the bowl. 3 Min. 100°C Speed Gentle Stirring.

Add fresh squids cut into pieces and a bit of chilli pepper. 15 Min. 100°C Speed Gentle Stirring Counter Clockwise.

Add king trumpet mushrooms and salt to taste. 10 Min. 100°C Speed Gentle Stirring Counter Clockwise.

Add rice and water. 10/12 Min. 100° Speed Gentle Stirring Counter Clockwise.

Add some more water if needed and a bit of wine if you want.
