Sweet Brioche Bread with Thermomix



This Sweet Brioche Bread recipe is the Thermomix version of a Romanian recipe. Stefania from Brescia has modified the traditional recipe and has sent it to me. The picture has also been taken by Stefania.

In Romania this is a typical Christmas or Easter cake. So this is the perfect time to try it! Very good Stefania, this bread is absolutely delicious!

Ingredients


- 550 g Flour
- 2 Eggs
- 1/2 Tbs Salt
- 100 g Sugar
- 25 g Brewer's Yeast
- 100 g Butter
- 175 ml Milk
- Rum


For the filling
- 150 g Walnuts
- 150 g Hazelnuts
- 100 g Chocolate
- 10 g Cocoa Powder
- 75 g Sugar
- 50 ml Liqueur
- 50 ml Milk


How to prepare the Sweet Brioche Bread


Heat the milk up. 1 Min. 37°C.

Add sugar and yeast. 10-15 Sec. Speed 3.

Pour flour, eggs, salt, rum and butter. Mix 3 Min. Speed Dough Mode.

Leaven until it doubles its volume.

Prepare the filling. Grind walnuts, hazelnuts and chocolate. 10 Sec. Speed 6.

Add sugar, cocoa powder, liqueur and milk. Stir 15 Sec. Speed 3.

Roll the dough out into a rectangular shape and spread it with the filling.

Roll it up.

Let leaven again for 1 hour.

Brush it with the egg-white and bake at 180°C for 20 Min.


How can I make this shape?


Giving this shape to the dough seems complicated but it isn't at all! Divide the dough into 3 pieces. Create a plait and close it like a wreath. :-)


My advice


A cake, many brioches! Yes, you can use this dough to form many small brioches. You may put them in the freezer and cook them when you fancy a sweet thing! The perfect idea is to try them with ice cream too.
