Wholemeal Bread with Thermomix

So, here you are Antonella's explanations about her recipe. She explained me she used honey to activate yeast in a tasty and natural way. She also used a particular flour, made by different flours and brain sold by "Molino Rosso" (Red Mill). The Molino Rosso company produces different flours. You can find its products in NaturaSi supermarkets in Italy. You may even use any other organic flour.
The Fattoria Maccazzola (Maccazzola Farm) is located in Settimo Milanese and produces very fine type 00 flour. You can replace it with another high quality flour.


Ingredients


- 200 g Wholemeal Flour by Mulino Rosso (or another mix of organic flours)
- 300 g White Flour "00" by Fattoria Maccazzola (or any other good quality flour)
- 300 g Water
- 20 g Extra Virgin Olive Oil
- Salt to taste
- 7 g Brewer's Yeast freeze-dried
- 1 Tsp Honey


How to prepare the Wholemeal Bread


Put water, honey and yeast in the bowl. 30 Sec. 40°C Speed 3.

Add the other ingredients. 40 Sec. Speed 5. Then 1 Min. Speed Dough Mode.

Remove the dough from the bowl and shape as you prefer.

Put the dough in a baking pan and place it inside the oven (switched off). Let leaven for 3 hours.

Then knead the bread again and cut in 13 pieces.

Put the bread rolls in the oven (switched off) again for 1 hour.

Finally bake for 20 Min. 180°C.
