Croissants with Thermomix



Would you like to prepare Croissants at home with your Thermomix? Here you can find the right ingredients, the whole procedure and even two videos that help you doing this recipe! Why all these things? Because the videos (even if they are two) weren't enough to explain the procedure very well.

Our video-chef makes many mistakes with his Thermomix so this is my suggestion:

- follow the quantities and the procedure of the written recipe

- watch the video to understand and see the moves behind all the preparation.

Here it is the recipe sent by the great Miriam Colombo a fan of the Italian Facebook page of Thermomix Recipes.


Ingredients


- 50 g Sugar
- 50 g Butter
- 1 Lemon Zest
- 250 g Milk
- 2 Eggs
- 1 Brewer's Yeast Cube
- 500 g Flour + 100 g
- 125 g Margarine
- 10 g Salt


How to prepare the croissants with Thermomix


Put the melted butter, the sugar, the salt and the eggs in the mixing bowl. 1 Min. Speed 5.

Add flour, yeast and milk. 1 Min. Speed Dough Mode.

Cover the dough for 10 Min.

In a bowl aside mix the margarine with 100 g of flour.

Roll out the dough to a very thin sheet and put the mixture of margarine and flour in the middle of the sheet.

Fold one third into the middle and then the other third on top. Seal the edges lightly with a rolling pin and turn the pastry 90 degrees.

Repeat this last step for at least 3 times.

Roll out the pastry to a very thin sheet and cut into triangles the you will roll up like a scroll so that the centre bulges and the ends taper out.

Place the croissants on a baking pan and bake at 180°C for 10-15 Min.

The author of the two videos is the confectioner Giuseppe Deianna. By the result of these croissants he seems to be a very good confectioner even if he doesn't use Thermomix with all of its potentialities.

- 500 g Milk
- 3 Eggs
- 50 g Brewer's Yeast
- 1 Kg Flour (+ 200 g)
- 250 g Margarine
- Jam / Chocolate for the filling

The croissants are perfect with this recipe but you must care about the quantities. As Giuseppe suggests at the end of the video "You should reduce these quantities by 50% at least. You'll have a better dough because Thermomix can't mix 1 Kg of flour".
