During a dinner party at a restaurant I got served a wonderful Rocket Pesto with Tomatoes. Here you can find my own version adapted for Thermomix, where the green rocket prevails instead of the fresh tomatoes. I also added parmesan cheese and pine nuts to give the sauce a better texture (well, better for my taste).
In this recipe I'm using fresh tomatoes, although rocket pesto traditionally goes with dried tomatoes. The rocket pesto and dried tomatoes recipe I prefer is the one of Paola, simple and delicious. You can do it with Thermomix too. Try them both and then tell me which one you prefer!
Ingredients
For the Rocket Pesto
- 150 g Rocket
- 40 g Parmesan Cheese
- 25 g Pine Nuts
- 100 g Extra-Virgin Olive Oil
- Salt to taste
For the Tomato Sauce
- 1 Garlic Clove
- 40 g Extra-Virgin Olive Oil
- 5 Peeled Tomatoes (best if ripe Roma Tomatoes, and it's ok to use canned tomatoes too)
Let's prepare our Thermomix Rocket Pesto with Tomatoes
Wash the rocket removing stalks and dry it. I use a classic salad spinner.
Put the rocket into the bowl. 5 Sec. Speed 7.
Gather with spatula and again. 5 Sec. Speed 7.
Add oil. 20 Sec. Speed 7. Put aside.
Put parmesan cheese and pine nuts in the bowl. 3 Sec. Speed 7. Put aside.
Prepare the sauce.
Put garlic and oil into the washed mixing bowl. 3 Min. 100°C Speed 1 Reverse.
Add peeled tomatoes. 20 Min. 100°C Speed Gentle Stirring Reverse.
Remove the garlic clove.
Add pesto to the sauce. 10 Sec. Speed 4 Reverse.
My Advice
You can use this rocket pesto with tomatoes to dress every kind of pasta. In the restaurant where I tasted it they used home-made spaghetti. Here you can see how the dish prepared by the Koda chef looked like.
