Artichokes Sauce with Thermomix: How to Dress Pasta with Artichokes



Artichoke can be a very good vegetable to dress pasta. I decided to make an Artichokes Sauce with it. With Thermomix I did it in a flash! This artichokes sauce has got an advantage: no artichokes pieces remain because it is very creamy. These are good aspects especially to children!

So with this artichokes sauce I've made my daughters eat artichokes too. I've added a little bit of parmesan cheese. My husband would have preferred tasting parmesan less and artichokes delicate savour more but I thought that was a good way of softening artichokes bitter taste for my daughters and they were very pleased!

It's a very simple sauce, very light because artichokes are cooked using Varoma. Then the sauce isn't cream or other fat cheeses based but it's only simple cooking water with a bit of flour.

This artichokes sauce is perfect for vegetarian people or who wants to eat an healthy and light dish.


Ingredients


- 2 Artichokes
- 1 Lemon Juice
- 500 g Water
- 1 Sprig of Parsley
- 20-30 g Parmigiano Reggiano


How to prepare the Artichokes Sauce with Thermomix


Clean artichokes very well, remove sticks too and leave them to soak for 10 Min. in a water and lemon solution.

Pour water in Thermomix bowl. Close with the lid. Then place artichokes upside down on the Varoma tray and put it on the Thermomix. 15 Min. Temp. Varoma Speed 1.

Put the tray aside.

Remove the water from the bowl and preserve it in a jug. Use 250 g of this water.

Pour this water in the bowl and add flour. 5 Min. 100°C Speed 4.

At the end of the cooking add artichokes and parsley. 10 Sec. Speed 7-8.

Add parmesan cheese. 5 Sec. Speed 3.

Use this sauce to dress the kind of pasta you prefer.
