I tried making it and the doses are absolutely perfect!
Very good, especially eaten together with salami or mortadella!
Ingredients
- 250 g Milk
- 500 g Flour
- 100 g Soft Butter
- 2 Brewer's Yeast Cubes
- 3 Spoons Sugar
- 1 Spoon Olive Oil
- 4 Eggs
- 50 g Ham
- 100 g Provola Cheese or Scamorza Cheese
- 50 g Grated Cheese
How to prepare the Neapolitan Rustic Brioche
Grind hand and provola or scamorza in the thermomix bowl. 2 Sec. Speed 7. Put aside.
Pour milk. 1 Min. 37°C Speed 1.
Add the other ingredients (including ground ham and provola) and mix. 3 MIn. Speed Dough Mode.
Let leaven for about 1 hour in a covered bowl.
Butter and cover with flour a baking pan, a very high one.
Bake. 180°C about 40 Min.

Serve this Rustic Brioche as a single course with some sliced salami, ham or mortadella.
