Would you like to prepare a very special Tiramisu Cake? This is the strawberries season and a Strawberry Tiramisu Cake like this will delight everybody's eyes and mouth!
Ingredients are as always eggs, mascarpone cheese and ladyfinger biscuits (or sponge cake), but in this recipe strawberries replace coffee making this cake suitable for everybody.
Tiramisu is an Italian cake loved all over the world and a starting point for would-be cooks because you don't need to use the oven. But you be careful as you unify egg-whites with the mascarpone cream or everything will "deflate".
Preparing the traditional tiramisu cake you can't satisfy all your decoration whims as you can do with strawberries! You can cut them in a half or in rounds, in pieces or you can shape them into small flowers and so on! ;-)
Children will love a tiramisu cake "they can eat".
I propose two recipes, the Letizia's from Catania one and the Amalia's from Bari one. Try them and let me know what you think.

Letizia's recipe
Ingredients
- 500 g Mascarpone Cheese
- 300 g Sugar
- 1 Small Lemon Zest
- 500 g Strawberries
- 1 Sponge Cake
How to prepare Letizia's Strawberry Tiramisu
Wash strawberries and cut into pieces. (put some of them apart to use for the decoration).
Put them in a bowl with 150 g of sugar and let macerate for a whole night. (they will create a sauce).
Put sugar in the bowl with the lemon zest. 10 Sec. Speed 9.
Strain strawberries and put their sauce aside.
Add the mascarpone cheese and 300 g of strawberries. Blend 15 Sec. Speed 7.
Cut the sponge cake in a half (horizontally) and spread the surface with half of the strawberries sauce.
Pour half of the mascarpone and strawberries cream on the first layer of sponge cake and cover with the rest of the strawberries (200 g).
Put the other half of the sponge cake on the strawberries and spread with the remained strawberries sauce.
Pour the second half of mascarpone and strawberries cream and garnish with the strawberries put aside before.
Keep refrigerated for some hours before serving.
Letizia's advice
If your strawberries haven't released enough sauce, add some milk.
Amalia's recipe
Ingredients
- 1 Ladyfingers Pack
- 500 g Mascarpone Cheese
- 1 kg Strawberries
- 5 Fresh Eggs
- 5 Spoons Sugar (100-120 g)
- 3 Lemons Juice
How to prepare Amalia's Strawberry Tiramisu Cake
Put ten strawberries aside for the final decoration.
Prepare the strawberries the night before; cut them into pieces and let them macerate in a bowl with 20 g of sugar and lemon juice.
Whip yolks with the rest of the sugar. 2 Min. Speed 4.
Add the mascarpone cheese. 30 Sec. Speed 3-4.
Remove this mixture from the bowl.
Insert the butterfly tool and whip egg-whites into stiff peaks.
Delicately add the egg-whites to the mixture.
Spread the savoiardi biscuits with the strawberries sauce and create the first layer adding half of the strawberries.
Pour a layer of the cream you got on the strawberries.
Make another savoiardi layer, then strawberries and cream.
End the preparation with a strawberries decoration.
It must be kept refrigerated for 3-4 hours before serving.
