Egg Tripe: Thermomix Traditional Italian Recipe

Now I'll tell you how to prepare the Egg Tripe with Thermomix. Pay attention! Don't let the word Tripe fool you! The Egg Tripe has nothing to do with animals entrails...It is a delicious dish made with eggs "cooked like tripe" I discovered thanks to Sicilian cooking, but it is a typical dish in many Italian regions. Using Thermomix you can prepare it in a very short time!

For the Egg Tripe
- 3 Eggs
- 20 g Milk
- 30 g Parmesan Cheese
- Salt to taste
- Black Pepper to taste
- Olive Oil to fry

For the Tomato Sauce
- 12 Cheery Tomatoes
- 1/4 Onion
- 20 g Olive Oil
- Salt to taste
- some Basil Leaves

How to prepare the Egg Tripe

Prepare the tomato sauce.

Put onion in the bowl. 3 Sec. Speed 7.

Add olive Oil. 3 Min. 100°C Speed 1.

Cut cherry tomatoes in a half and put them in the bowl. 7 Min. 100°C Speed Gentle Stirring Reverse.

Prepare the egg tripe.

Wash the bowl. Pour eggs, milk, parmesan cheese, salt and pepper. 30 Sec. Speed 5.

Grease a frying pan with a little olive oil and pour part of the egg mixture. It must be a very thin omelette. Pour the appropriate quantity of mixture according to your frying pan size. Cook both sides.

Make many small omelettes.

Roll each omelette on itself and cut into 1 cm thick stripes. Here you are the egg tripe!

Pour the tomato sauce on it and dress with some basil leaves if you like.

My advice

Children like Egg Tripe too! If you want to make it more appetising add some more parmesan cheese.
