Using Thermomix you can prepare it in a very short time!
Ingredients
For the sauce:A small onion
30 gextra virgin olive oil
300 g of cherry tomatoes
20 g tomato puree
Salt to taste
For the fake tripe:
5 eggs
40 g whole milk
50 g of grated Parmesan cheese
Salt to taste
Pepper as needed
Extra virgin olive oil as needed
Let's cook
Prepare the sauce: put a small onion in the mixing bowl and chop 3 Sec. Speed 7.Add 30 g of extra virgin olive oil and cook 3 Min. 100C Speed 1.
Cut 300 g of Pachino tomatoes in half and place them in the mixing bowl.
Add 20 g of tomato puree and cook 7 Min. 100C Reverse Soft Speed. Set aside.
Prepare the egg tripe: put 5 eggs, 40 g of milk, 50 g of grated Parmesan cheese, a pinch of salt and a pinch of pepper in the clean mixing bowl. Mix 30 Sec. Speed5.
Grease a pan with a little extra virgin olive oil and pour in the mixture, so as to obtain a thin omelette to be cooked for 1 min. per side.
Make more omelettes until the mixture runs out.
Roll each omelette and with a knife cut each into strips of 1 cm thick.
Place the fake tripe on a serving dish and season with the sauce set aside.

Tips
To make the dish even more delicious, add 20 g of grated pecorino to the egg mixture.Decorate with a few leaves of fresh basil or with dried oregano.
