One of the methods for seasoning meat is to marinade it in a flavoured liquid for a certain period of time so that it becomes softer and absorbs all the flavours used.
In this recipe coffee together with brandy and some spices give an intense aroma, very "ethnic" to a kind of meat we easily find in a supermarket. So you can offer your guests or relatives something that is not the same roasted meat as always, but a particular second dish, a bit daring I'd say.
Pork meat is one of the cheapest ones and the originality of this recipe will make you have a success with a little expense!
Don't worry about the four small cups of coffee. If you preserve coffee leftover and keep it in the fridge in a few days you will have the amount you need for the marinade. So you have an original, cheap and leftover saving recipe! Can you asking for more?
When I prepared this kebabs there was a friend of mine that does not like strong flavour and always asks for traditional recipes. So I prepared simpler kebabs for him and my daughters: white wine and rosemary marinade.
If you have enough time you can prepare different aromas and bring to the table various kebabs to satisfy all tastes.

Ingredients
- 5 cloves- 4 cardamom seeds
- 1 pinch of ground cinnamon
- 100 g coffee
- 60 g Brandy or Cognac
- 300 g pork tenderloin
- 2 oranges
- 18 bay leaves
- Salt to taste
- 500 g water
- Extra virgin olive oil to taste
- Pepper as needed
Let's cook
Put in the mixing bowl 5 cloves, the 4 cardamom seeds, a pinch of cinnamon and mix 5 Sec. Speed Turbo.Add 100 g coffee and 60 g brandy and mix 30 Sec. Speed 3.
Cut 300 g pork fillet into small pieces so as to obtain 24 pieces and put it in a plastic bag for food, adding the marinade. Close the bag by removing the air and leave to marinate in the fridge for half a day.
Peel 2 oranges, separate the wedges and cut them in half.
Drain the marinade and compose the skewers by inserting meat, bay leaf (folded in half), orange. Repeat 3 times and finish with the meat so that in each skewer there are 4 pieces of meat, 3 bay leaves and 3 half orange wedges.
Put the salt on the skewers.
Put 500 g water in the mixing bowl.
Line the Varoma tray with wet, wrung out baking paper.
Place the skewers in the Varoma tray placing it on the Thermomix and cook 20 Min. Varoma Temp. Speed 1.
Serve the skewers after seasoning them with extra virgin olive oil and pepper to taste.
