Have you got any courgette flowers? Aren't they pretty enough to make them stuffed but they are good? So you must try this recipe here: a Courgette Flowers and Cherry Tomato Omelette.
I've bought some courgette flowers at the market. They were cheap, not opened (so I couldn't do them stuffed) but they were fresh. I've fried some of them with batter, as in the Deep Fried Round Zucchini in Batter recipe. What about the rest of them? I have to eat a lot of meat, fish and many eggs, so I've decided to make an omelette.
I made it in a pan but for those who love cooking with Varoma, this omelette can also be cooked with steam (with Thermomix of course). Same procedure like the Artichokes omelette. Try them both and let me know which one you prefer!
Ingredients
4 people serving
- 1/2 Onion
- 25 g Extra-Virgin Olive Oil
- 100 g Cherry Tomatoes
- 10 Courgette Flowers
- Salt to taste
- 4 Eggs
How to prepare the Courgette Flowers and Cherry Tomato Omelette with Thermomix
Put the onion in the bowl. 3 Sec. Speed 7.
Add oil. 2 Min. 100°C Speed 1.
Put cherry tomatoes cut in pieces. 3 Min. 100°C Speed Gentle Stirring.
Add entire courgette flowers. 3 Min. 100°C Speed Gentle Stirring.
Mix. 2 Sec. Speed 7. Put aside.
Put the eggs in the bowl. 4 Sec. Speed 7.
Add courgette flowers and tomatoes you put aside. 10 Sec. Speed 3.
Now you can fry in a pan your omelette, as I did. Or you can cook it in the Varoma tray. To do so you have to cover the Varoma tray with greaseproof paper and pour the egg mixture inside it. Pour 500 g of water in the bowl and cook. 10 Min. Temp. Varoma Speed 1.
My advice
For children who don't like finding and eating small vegetable pieces, I suggest you mix the filling too...my experience teaches :-))))
