Italian Regional Biscuits with Thermomix - Rame di Napoli



This video tells how to prepare the traditional southern Italy biscuits "Rame di Napoli". They are delicious chocolate biscuits!

According to the tradition they used to be made and given to children on the All Saints Day. They are also good during Christmas period. And...if you are a chocolate lover why don't you prepare them during the whole year?

Unfortunately the author of the recipe does not show us how to prepare this fantastic recipe but all the indications are given.

The wonderful picture of the "Rame di Napoli" is taken from the website Sogni di Zucchero, run by Marialetizia. Instead of using grated pistachios (as the video-recipe suggest), Marialetizia decorated her biscuits with a white chocolate "S". Gorgeous!


Ingredients

- 500 g Plain Flour
- 250 g Milk
- 100 g Margarine
- 200 g Sugar
- 100 g Unsweetened Cocoa Powder
- 2 Tbsp Honey
- 1 Tsp Cinnamon
- 2 Tsp Baking Powder
To garnish
- 200 g Dark Chocolate
- Ground Pistachios to taste





How to prepare the Rame di Napoli

Put all the ingredients in the bowl. 30 Sec. Speed 5 using the spatula.

If the dough is too thick, add some more milk and mix at Speed 5 for a few Sec.

Cover a baking tin with greaseproof paper and spoon small balls of dough distant enough one from the other. Flatten a little bit with your hands.

Bake at 180°C for about 10 Min.

When cold, cover the biscuits with melted dark chocolate and then spread with ground pistachios.


Agata Gabriella Ursino Manola's advice

"250 g Milk are not enough. I add 350 g and then I add more if needed while stirring with the spatula. Then I mix at Speed 5 until I have a very sticky dough. I use 2 full spoons of honey (polyflora honey in my dough) and 2 flat teaspoons of ammonium bicarbonate".
