The recipe for this zucchini pesto dates back to many years ago and I almost can't remember the story. I only know that after discovering it I never left it again! It is a creamy and delicate pesto, thanks to the milk which makes it fresh and velvety.
With my husband and the children, we also once made a riddle to the children to discover the ingredients hidden in the recipe. In fact, I like that they know what they eat and where all the flavours they feel when they taste a dish come from. I heard that chef Barbieri's grandmother did it too! Who knows if one day I won't find a chef at home… :-)
Good, tasty and quick to prepare, the pesto with zucchini recipe is really ideal for seasoning pasta in the hot season. You can combine it with cherry tomatoes, salmon cut into strips, sweet ham, buffalo mozzarella ... but I find it so good !!
As my aunt said, with this Thermomix zucchini pesto you can do everything: first course, second course and side dish ;-)
Ingredients
(4 people serving)
- 20 g pine nuts
- 40 g parmesan cheese
- 1 garlic clove
- 30 g basil leaves
- 300 g zucchini
- 50 g extra virgin olive oil
- 100 g whole milk
- salt to taste
Let's cook
Put 20 g pine nuts and 40 g parmesan cheese in the mixing bowl and mix 8 Sec. Speed 8. Put aside.Put 1 garlic clove and 30 g basil leaves in the mixing bowl and mix 2 Sec. Speed 7.
Add 300 g zucchini cut into rounds and mix 5 Sec. Speed 4.
Add 50 g extra virgin olive oil and cook 4 Min. 100°C Speed 1.
Add 100 g whole milk and salt to taste and cook 6 Min. 100C Speed 1.
Wait until temperature goes down to 80C and mix. 15 Sec. Speed 8.
Add the mixture of pine nuts and parmesan cheese and mix 15 Sec. Speed 8.
Tips
If you put it in the jars, cover it with a drizzle of oil and keep it in the refrigerator for up to 2-3 days.You can also freeze it. Just pass it from the freezer to the refrigerator in the evening for the morning or vice versa and add a spoonful of cooking water to stir it a little, directly in the bowl in which you will season the pasta.
You can add mint leaves.
You can replace pine nuts with other dried fruit, such as almonds.
