Thermomix Gluten Free Pancakes

Are you gluten intolerant? Then I am sure this Thermomix Gluten Free Pancakes recipe is one of those recipes you were desperately looking for!!

Finally people who cannot take gluten will be able to experience that unique breakfast delight that we all know with the name of pancake.

I wanted to group all the best recipes for gluten free pancakes over the internet and I hope I did it by doing this post. :-)

I do not need to tell you the infinite possibilities of eating a pancake: with fruits, agave syrup, maple syrupe, simple honey, or any of your favourite jam.

Two recipes use buttermilk as one of the main ingredients. Another one, apart from being gluten free, is also dairy free and I think it could be of great interest.

- 200 g Brown Rice Flour
- 50 g Tapioca Starch
- 2 tsp Guar Gum
- 4 Eggs
- 400 g Rice Milk
- 20-30 g Rice Bran Oil
- 50 g Brown Sugar
- 2 tsp Cinnamon

How to prepare Thermomix Gluten-Free Pancakes

Place all ingredients in thermomix.

Mix on Speed 4 for around 5-10 Sec.

Scrape down sides and mix for another 5-10 Sec.

Rest for 10 Min. before cooking.

Makes 12-15 medium sized pancakes

- 125 g Brown Rice
- 125 g Buckwheat Grain
- 300 g Buttermilk
- 1 Egg
- 2 tsp Baking Powder
- 1/4 tsp Bicarbonate of Soda

How to prepare Thermomix Gluten-Free Pancakes

Weigh the rice and buckwheat into the TM bowl. Grind on Speed 9 for 1 Min. to make flour.

Add buttermilk and mix on Speed 4 for a few seconds or until combined.

Leave for 12-24 hours.

Add the remaining ingredients and mix on Speed 4 for a couple of seconds or until combined.

Cook the pancake batter in a frying pan greased with a little butter or oil.


Use wheat or spelt grain in place of the brown rice if you are not gluten intolerant.

- 1 cup Gluten Free Plain Flour (White Wings brand)
- 1 cup Buckwheat flour (Lowan brand)
- 2 tsp Gluten Free Baking Powder (i didn't have any GF so skipped this)
- 1 tsp Bicarbonate Soda
- good sprinkle vegetable Salt (we use Herbamare)
- 2 tbsp Sugar
- 2 large Eggs
- 600 ml Buttermilk
- 3-4 tbsp unsalted Butter, melted in the fry pan you're going to cook the pancakes
- cup or punnet Blueberries, fresh or frozen and thawed (optional)

How to prepare Thermomix Gluten-Free Pancakes

Place all ingredients except the blueberries in the thermomix. Mix on Speed 6 for 10 Sec. scrape down sides and mix on Speed 6 for another 10-20 Sec. Leave to rest for 20 Min.

Heat your pan on a medium heat and grease as needed (I just use cooking spray to regrease between pancakes).

Pour in around 1/4 - 1/3 cup of batter. If you are having blueberries drop some on top - I usually like to push them down a bit so they sit 'in' the pancake rather than on top of it.

When the pancake has bubbled and looks slightly set it's time to flip it over gently. It will only take minutes to brown on the bottom.

Serve with a drizzle of maple syrup. These would probably be nice with the thermomix strawberry sauce too!
