Thermomix Gluten Free Pancakes

I do not need to tell you the infinite possibilities of eating a pancake: with fruits, agave syrup, maple syrupe, simple honey, or any of your favourite jam.

Two recipes use buttermilk as one of the main ingredients. Another one, apart from being gluten free, is also dairy free and I think it could be of great interest.

Ingredients

- 15 g unsalted butter + to taste
- 300 g rice flour
- An egg
- 20 g sugar
- 16 g baking powder
- 310 g whole milk
- A tsp salt



Let's cook Gluten Free Pancakes!

Put 15 g unsalted butter in the mixing bowl and melt 1 Min. 80C Speed 2.

Add 300 g rice flour, an egg, 20 g sugar, 16 g baking powder, 310 g of whole milk and a tsp salt and mix 20 Sec. Speed 4. The mixture must be thick.

Heat a non-stick pan about 12 cm diameter.

Grease it with butter.

Pour two little ladles of mixture. When the bubbles appear on the surface, turn the pancake with a scoop and cook for a few more seconds.

Repeat until the mixture runs out.

Tips 

You can make rice flour with the Thermomix!

Turn the pancakes when the whole surface has small bubbles. Remove them from the pan when they come off easily with the scoop.

Stir the mixture often to prevent the dense part from settling on the bottom.
