Thermomix Beetroot Salad Recipe

Like beetroot? Or have some taking up fridge space? Well, this Thermomix Beetroot Salad Recipe is what you need, and it's irresistible!

This recipe is very quick and easy to make, especially with a Thermomix.

Beetroot is also known as table beet, garden beet, red beet or just beet, and it is different from sugar beet which is used in sugar production. It is usually eaten boiled or roasted in a salad, like in this recipe.

Do not forget it is also a great source of antioxidants which are great for our skin and lots of nutrients like magnesium, sodium, potassium and vitamin C!

Beetroot juice helps reducing blood pressure and preventing cardiovascular problems.

Well, it's a pity we do not eat enough beetroot then!! These recipes are just some of the numerous varieties of salad you can prepare with this fantastic root. Just use your imagination and combine your favourite ingredients with it!

Ingredients

- 600-700 g. Beets (leaves removed)
- 1 large seedless Orange
- 2 large cloves Garlic (or more if you really love garlic)
- 2-4 Green Onions
- 35 g Umeboshi paste (paste fromtart  salt-pickled Japanese plums)
- 5 g toasted Sesame oil
- 35 g neutrally flavored Oil (I use canola or flax for health reasons)
- 2 Tbsp. toasted Sesame seeds
- 1 small handful Coriander leaves (also known as cilantro)


How to prepare Thermomix Beetroot Salad Recipe

Lightly cook beets by bringing to a boil and simmering for about 10-15 Min. They don’t need to be thoroughly cooked, but at least long enough so that skins can be easily removed. Remove skin from beets. (This can be done in advance if desired, just keep peeled beets in the fridge until ready to proceed.)

Begin by grating zest from the orange. Set zest aside.

Remove remaining pith and peel from the orange. Take half the orange, cut into quarters and add to Thermomix bowl. Reserve other half for later use.

Add sesame oil, other oil, umeboshi paste and garlic to the bowl. Puree 10 Sec. Speed 7.

Scrape sauce from Thermomix lid and sides down into bowl. This is a good time to sample the sauce with fingertip...see how flavorful it is?  (No need to add salt!)

Cut peeled beets into halves or quarters and add to bowl.

Cut green onions in half and add white end sections to the bowl. Process. About 4 Sec. Speed 6 to suit your preference. (see note below)

Break remaining orange into sections and chop into smaller pieces. Add to bowl with 1 Tbsp. sesame seeds and chopped green onion stems. Gently mix. 4 Sec. Reverse Speed 3.

Garnish with orange zest, remaining sesame seeds, fresh coriander/cilantro, and chopped green onion if desired.

Some people enjoy the softer texture of cooked beets and some prefer the lively crunch of beets that are more raw than cooked.
Depending on how much or how little you’ve cooked the beets, you may want to alter the processing time — if beets are well cooked larger chunks are easily chewed, but when working with a more raw texture, a finer chop may be preferred.

Ingredients

- 400g Raw Beetroot (peeled & quartered)
- 100g Carrot, quartered
- 1/4 small Red Onion
- 1 Green Apple, quartered & deseeded
- 1 handful of fresh Coriander / Italian Parsley leaves
- 2 tbsp Olive Oil
- juice of 1/2 Lemon
- 1 tsp Rapadura
- pinch Salt


How to prepare Thermomix Beetroot Salad Recipe

Place roughly cut vegetables in Thermomix and chop 2-3 Sec. on Speed 5 or until evenly chopped.

Scrape down sides and chop again for a couple of seconds until desired consistency.


Jo's advice

If you accidently process too much, or you have leftovers, add some raw cashews or almonds, process until finely ground, and use as a dip!

I sometimes make this with half carrot, half beetroot - it's a bit cheaper, and the kids like carrot more than beetroot! :)

DRESSING
- 20 g Pomegranate Molasses
- 20 g Balsamic Vinegar
- 45 g Orange Juice
- 30 g Olive Oil
- 1 tbs Honey
- 1 handful fresh Mint leaves

- 400 g Beetroot, peeled and quartered
- 400 g Carrot, peeled and roughly chopped
- 55 g Raisins
- 20 g Sunflower Seeds, toasted
- 20 g Pumpkin Seeds, toasted
- 1/4 tsp salt
- Feta and Baby Spinach leaves to serve


How to prepare Thermomix Beetroot Salad Recipe

Add dressing ingredients to bowl. Mix 5 Sec. Speed 6.

Add carrot and beetroot and chop. 4-5 Sec. Speed 5. Use spatula to assist mixing and to ensure all ingredients are chopped evenly and no large pieces remain.

Scrape down sides of bowl and add raisins, seeds, and salt. Combine 3-4 Sec. Reverse Speed 2. Use spatula to assist mixing.

Serve salad on baby spinach leaves and top with crumbled feta.
