Would you like to try a very original recipe with Olives and Minced Meat? This is a really tempting one!
It has been sent by Francesca from Rome who wrote:
"They are small olives meatballs...I and my husband gave them this name because my mother call them fake ascolana olives which seemed not to fit very well!"
I like these Olives (meatballs) so much! That's why I couldn't decide myself and I put both the names. :-)
And you? Which name you prefer?
- 200 g Meat (100 g minced, 100 g sausage)
- 1 Spoon Bread-crumbs
- 1 Spoon Grated Parmesan Cheese
- 200 g Green Olives, pitted
- 1 Egg
- Flour at need
- Parsley to taste
How to prepare the Fake Ascolana Olives
Grind parsley, a few Sec. Speed Turbo. Put aside.
Grind olives, a few Sec. Speed Turbo.
Add meat, bread-crumbs, parmesan, parsley, egg and a pinch of salt. Mix 30 Sec. Speed 3.
Shape into small balls similar to olives and cover with flour.
Put some water into a pan and let boil without salt. Put them into boiling water and wait until they rise up. Now you can take and drain them with a skimmer spoon.
Cover them with bread-crumbs, grease a baking pan with olive oil and put them in it. Bake in pre-heated oven at about 200°C.
When they brown you can serve them.
