Olives Meatballs Fake Ascolana Olives

Would you like to try a very original recipe with Olives and Minced Meat? This is a really tempting one!

"They are small olives meatballs...I and my husband gave them this name because my mother call them fake ascolana olives which seemed not to fit very well!"

I like these Olives (meatballs) so much! That's why I couldn't decide myself and I put both the names. :-)

Ingredients

- a sprig of parsley
- 200 g green olives (pitted)
- 200 g meat (100 g minced, 100 g sausage)
- 1 tsp bread crumbs + as needed
- 1 tsp grated Parmesan cheese
- 1 egg
- Salt to taste
- plain flour as needed
- water as needed
- extravirgin olive oil as needed




How to prepare the Fake Ascolana Olives

Put a sprig of parsley in the mixing bowl and chop slightly a few Sec. Speed Turbo.

Put 200 g green olives (pitted) in the mixing bowl and chop 3 Sec. Speed 5.

Add 200 g meat (100 g minced, 100 g sausage),1 tsp bread crumbs, 1 tsp grated Parmesan cheese, 1 egg
and a pinch of salt and mix 30 Sec. Speed 3.

Shape into small balls similar to olives and cover with plain flour.

Pour some water into a pot and let boil.

Put the balls into boiling water and wait until they rise up. Drain them with a skimmer spoon.

Cover them with bread crumbs, grease a baking pan with extravirgin olive oil and put them in it. Bake in oven about 15 Min. 200C. Serve warm.
