Speck is a flavoured and tasty ham, produced in Northern Italy but all Italians love it! It combines perfectly with the bitter taste of radicchio. This combining is often suggested for a risotto recipe, but in this recipe the same ingredients are used to prepare another yummy first dish, for those who love the traditional Italian cuisine dish: pasta!

The recipe has been sent by Stefania Arena and I prepare it for supper to my husband who loves speck and to my daughters who will eat some vegetables and won't notice it! ;-)

Another pasta sauce you find is the Zucchini, Speck and Fontina Cheese one.
- 70 g Butter
- 1 Small Onion
- 150 g Speck
- 150 g Radicchio
- Chilli Pepper to taste
- Salt to taste
How to prepare the Radicchio and Speck Pasta
Put butter and onion in the bowl. 3 Min. 90°C Speed 4.
Cut speck into thin stripes and add to the bowl with chilli pepper and salt. 5 Min. 100°C Speed 2.
Cook pasta and then dress it with this sauce you made.
You can replace butter with half grams of oil and half of margarine.
A variation: add 50 g Speck and 50 Radicchio. At the end of cooking, blend 1/3 of the dressing and add it to pasta.
