Italian Radicchio and Taleggio Cheese Risotto with Thermomix



Would you like to prepare an Italian Radicchio and Taleggio Cheese Risotto with Thermomix? This recipe allows you to do that in a perfect way with genuine and fresh selected ingredients.

In this recipe there are two of the traditional main ingredients of northern Italy cuisine. And they match perfectly: the Radicchio of Treviso and the Taleggio Cheese. It's strange how these two strong flavoured foods balance each other. Radicchio "cleanses your mouth" (you must have heard this expression said by the "experts" of taste. ;-) ) from the Taleggio cheese strong taste and pasty consistency.

If you feel like eating risotto you may tray the Squids and Mushrooms Risotto and the Herbed Rice. Yes, with Thermomix!

I really like this radicchio and taleggio cheese risotto but I had never prepared it with Thermomix. Until now. The recipe has been sent by Milena a fan of the Facebook Italian page of Thermomix Recipes. I tried it and I think it is fantastic! :-P

Thanks to Milena I found another way to bring vegetables to the table hiding it very well I'd say. Everyone always asks for seconds and I often need to calculate more portions.


Ingredients


- 500 g Carnaroli Risotto Rice
- 200 g Radicchio of Treviso
- 150 g Taleggio Cheese
- 30 g Extra-Virgin Olive Oil
- 40 g Dry White Wine
- 1 Shallot
- 1 L Water
- Thermomix Stock Cube
- 30 g Grated Parmesan Cheese


How to prepare the Italian Radicchio and Taleggio Cheese Risotto


Wash the radicchio and grind it. 30 Sec. Speed 5.

Add the shallot and grind. 15 Sec. Speed 5.

Add the oil. 3 Min. 100°C Speed Gentle Stirring Reverse.

Pour in the rice and toast. 2 Min. 100°C Speed Gentle Stirring Reverse.

Add the wine. Cook without measuring cup. 2 Min. 100°C Speed Gentle Stirring Reverse.

Pour hot water and Thermomix stock cube. Cook without measuring cup. 13 Min. 100°C Speed Gentle Stirring Reverse.

Add the taleggio cheese in pieces and cook for other 2 Min. 100°C Speed Gentle Stirring Reverse.

At the end of the cooking pour the risotto in a serving dish, add the parmesan cheese, mix well and serve.


Milena's advice


If you don't have Thermomix Stock Cube at your disposal you can replace it with the classic stock cube (unfortunately less genuine). Milena uses one and a half of that.

Once you put the rice in the serving dish, let stay for 3-4 minutes, so that "the result is perfect".
