Seafood Paella with Thermomix



Here is the Seafood Paella recipe made with Thermomix. Yes, you can also prepare this fantastic Spanish dish with your machine!

Paella is an old traditional Spanish dish born as a humble meal in the countryside of Valencia on the east coast of Spain. Around the end of 1800 it started to be prepared at inns and in stands on the beach until it became internationally famous as one of the top dishes of the Spanish culinary tradition.

There are many variants of Paella that differ for additional ingredients (such as seafood), but the traditional recipe called "Valencian Paella" is made of meat and vegetables.

The term "Paella" derives from the Old French word "paelle" for pan which in turn comes from the Latin word "patella" for pan as well. "Patella" is also akin to the modern French "poêle" the Welsh "padell" the Italian "padella". Originally the word paella was used for all pans, including the specialized shallow pan used for cooking paellas. However, in most of Spain and throughout Latin America, the term Paellera is more commonly used for this pan.

Paellera is traditionally round, shallow and made of polished steel with two handles. It also differs for its depth which is usually 5 or 6 centimetres and its diameter varies according to the servings: 4 people serving you use a 45 cm Paellera, 10 people serving you use even a 1 metre Paellera! My Spanish friend Gloria told me that in some particular occasions, for example during village festivals or charity festival you can see very big Paelleras of giant dimensions, even more than 2 metres of diameter!

So the real Paella should be cooked in the appropriate Paellera. But I prepared it with my Thermomix which makes everything easier and quicker :-) my husband licked his chops and my daughters liked it too! The result was a beautiful sight..and an even better taste!


Ingredients


(4-6 people serving)
- 3 Medium size Peppers (1 red, 1 yellow, 1 green)
- 300 g Peas (frozen are good)
- 400 g Rice (Roma quality)
- 500 g Mix Seafood: Squids, Mussels, Clams, Prawns
- 250 g Sausage
- 250 g Chicken Breast
- 1 Saffron Sachet (0,125 g)
- 1 Spoon Thermomix Stock Cube
- 700 g Water
- 60 g Extra-Virgin Olive Oil
- 1 handful Parsley
- 2 Garlic cloves
- Salt and Pepper to taste


How to prepare the Seafood Paella


Put garlic and parsley in the bowl and chop. 5 Sec. Speed 7.

Gather the chopped mix with the spatula.

Add peppers cut into cubes, oil and salt. 5 Min. 100°C Speed Gentle Stirring Reverse.

Put aside.

Pour 700 ml water without washing the bowl. Add saffron and stock cube. Insert the simmering basket with rice and pies on it.

Put chicken breast and the skin-removed sausages cut respectively into cubes and small pieces into the Varoma basket. Salt according to your taste.

Place the seafood mix in the Varoma tray.

Cover with the Varoma lid and cook. 30 Min. Temp. Varoma Speed 2.

At the end of the cooking mix all the ingredients in a serving dish with high edges, season with pepper and salt if needed.
