Who has ever resisted a second portion of Apple Strudel?
It is a delicious cake, filled in with apples, pine nuts, raisins and cinnamon: a delicacy :-) This recipe has been sent by Maria Gabriella from Turin who writes: "I met an Austrian woman some time ago, I can't remember her name; she gave me the original Strudel recipe. Then I adapted it for Thermomix according to my taste".
Preparing Strudel with Thermomix is so easy, the dough is perfect and the final result excellent!
Maybe not everyone knows the Studel is a typical cake from Trentino Alto Adige (Northern Italian region) but it was originally born in Turkey. Turkish people who dominated Hungary in 1600, prepared a similar apple cake called Baklava. Then the recipe has been changed and transformed by Hungarians in the actual Strudel. It soon spread in Austria and consequently in some Northern Italy regions. :-)
The authoress of the recipe Maria Gabriella from Turin also sent me other very good recipes to prepare with Thermomix. I want to share them with you. For the dough:
- 250gr Flour
- 1Tsp Olive Oil
- 1 Pinch Salt
- 160gr Tepid Water (or 130gr Milk + 30gr Water)
- 20gr Butter
- 20gr Honey
For the Filling:
- 1 kg Apples
- 1 Lemon Juice
- 1 Grated Lemon Zest
- 100gr Butter
- 100gr Raisins
- Pine Nuts (to taste)
- 50gr Rum (optional)
- 250gr Brown Sugar
- 30gr Thyme Honey
- 2 Tsp Cinnamon
- 20gr Breadcrumbs
- Icing Sugar to taste
Let's prepare our Apple Strudel
For the dough.
Pour milk and water in the bowl and add butter. 3 Min. 100°C Speed 3.
Add the remaining ingredients 1 Min. Speed. Dough Mode.
Put the dough in a bowl, cover with plastic film and keep refrigerated while preparing the filling.
For the filling.
Soak raisins in rum for five minutes.
Peel apples, cut into thin slices and sprinkle with lemon juice and grated zest, add sugar, honey and squeezed raisins.
Toast breadcrumbs in a pan with butter until lightly browned, then add sugar and toast for another minute.
Remove the dough from the fridge and roll it out. Place it on slightly floured baking paper. Spread the dough with melted butter.
Cover the dough with toasted breadcrumbs and then place the apples.
Roll it up paying attention, the dough could break.
Close both ends and spread the whole surface with a bit of melted butter and make some cuts on the surface.
Bake at 180°C for 30 Min or more, it depends on your oven.
Remove from the oven, let it cool down, then cut into slices and dust with icing sugar.
