Apple Strudel with Thermomix

Who has ever resisted a second portion of Apple Strudel?
Preparing Strudel with Thermomix is so easy, the dough is perfect and the final result excellent!

Maybe not everyone knows the Studel is a typical cake from Trentino Alto Adige (Northern Italian region) but it was originally born in Turkey. Turkish people who dominated Hungary in 1600, prepared a similar apple cake called Baklava. Then the recipe has been changed and transformed by Hungarians in the actual Strudel. It soon spread in Austria and consequently in some Northern Italy regions. :-)

Ingredients


For the dough
- 90 g water
- 50 g unsalted butter
- 250 g plain flour
- An egg
- 10 g of sugar
- Salt to taste

For the stuffing
- 4 apples (about 1200 g)I used rennet apples
- 100 g unsalted butter
- 40 g breadcrumbs
- 60 g apricot jam
- 30 g raisins
- 30 g toasted pine nuts
- Powdered sugar to taste
- Cinnamon powder to taste

For finishing
- 15 g of butter
- Powdered sugar to taste


Let's cook!


Put 90 g water and 50 g unsalted butter into the mixing bowl and melt 30 Sec. 50C Speed 2.

Add 250 g plain flour, an egg, 10 g sugar and a pinch of salt and Knead 1 Min. Dough Mode.

Leave to rest for 15 Min. on a large sheet of floured baking paper, covered with a cotton cloth.

Roll out the dough with a floured rolling pin until you get a very thin, almost transparent sheet.

Wash, clean and cut 4 apples into thin slices and then distribute them on the pastry.

Put 100 g unsalted butter in the mixing bowl and melt 1 Min. 70C Speed 2. Brush the pastry with some of the melted butter.

Add 40 g breadcrumbs to the remaining butter in the mixing bowl and cook 3 Min. Varoma Temp. Speed 2 and then spread over the apples with a spoon.

Sprinkle the filling with 60 g apricot jam, 30 g raisins and 30 g toasted pine nuts.

Top with a sprinkle of ground cinnamon and powdered sugar.

Using the baking paper, roll the dough sprinkled with the filling, close it, crush and fold the two ends down.

Put 15 g butter in the mixing bowl and mel 1 Min. 70C Speed 2.

Polish the strudel the butter.

Bake in a hot oven 60 Min. at 180C.

Let cool and sprinkle with icing sugar before serving.

Tips


The sheet on which you put the dough to rest must be large, because you will then need it to roll out and roll the strudel.

You can replace rennet apples with the more common golden apples. Although ... the rennet apple has that acid note that perfectly balances the sweet of sugar and jam !!

You can vary the original recipe by replacing the apricot jam with fig jam.

To toast the pine nuts, place them in a non-stick pan until golden brown.

For the dough you can also use the Thermomix quick puff pastry in 30 seconds.
