Blueberry Cheesecake with Thermomix



The Blueberry Cheesecake is one of the fruit cakes I love preparing the most especially when I am tired! In those moments, preparing a cake for the next morning is what relaxes me indeed! Making it with Thermomix is even fun because it makes everything :-)

I love seeing a pretty table in the morning with a beautiful yummy fruit cake on it. Maybe it is because blueberries are very good for your health or maybe because my daughters like it....in short a slice of this cake and life will smile at you! :-)

This yummy recipe very easy to prepare has been sent by Cristina Leandri from Bologna.

When I prepared this cake its friable dough and soft custard made me think of that beautiful film with Norah Jones (yes, the singer), Jude Law and Natalie Portman I watched some years ago. It was called....."My Blueberry Nights"! Yes, it is because the main characters meet (and fall in love) thanks to a Blueberry Pie :-)

Here you are a quote from this film I like so much: "Hmm. It's like these pies and cakes. At the end of every night, the cheesecake and the apple pie are always completely gone. The peach cobbler and the chocolate mousse cake are nearly finished... but there's always a whole blueberry pie left untouched. There's nothing wrong with the Blueberry Pie, just people make other choices. You can't blame the Blueberry Pie, it's just... no one wants it"

I have to say...I want the Blueberry Pie!! :-)

If you like preparing fruit cakes and pies try preparing the Apple Pie, the Apple and Amaretto Liqueur Cake, the Grape and Walnut Cake or the Sour Cherry Pie.

Ingredients


For the base:
- 250 g Digestive Biscuits
- 125 g Butter
- 1 Egg

For the filling:
- 250 g Mascarpone Cheese
- 250 g Ricotta Cheese
- 3 Eggs
- 3 Tbsp Sugar
- 1 Tbsp Vanilla Sugar or 0,5 g Vanilla Extract

For the dressing:
- Blueberry Jam


How to prepare the Blueberry Cheesecake


Prepare the base. Put biscuits and all the other ingredients in the bowl and mix until you have a compact dough. 2-3 Min. Speed 5/6.

Roll this dough out in a baking pan covered with greaseproof paper.

Prepare the filling. Put all the ingredients for it in the bowl until you have a creamy mixture. 3 Min. Speed 5.

Turn on the oven at 200°C.

Pour the filling mixture on the base and bake for 40 Min.

When cold, spread with your favourite blueberry jam.


Cristina's advice


It is a very good recipe! A restaurant keeper gave it to me. It is like a lighter cheesecake, more delicate!


My advice


You can also decorate with some fresh blueberries. You can also find them frozen.
