Carbonara Recipe: Thermomix Zucchini Carbonara

Carbonara Recipe: Thermomix Zucchini Carbonara This Carbonara Recipe is suitable for those who don't eat meat, as it uses zucchini instead of pancetta. Originally from Lazio (the region where Rome is) it is now popular all over the country and the world.

This zucchini version was sent by Antonella Cappelluti from Piacenza, a fan of the Italian blog. I thought it would be well appreciated by my friends overseas too, and so here it is for you to try :-) And if you like Crabonara, you should definitely give a go to the Tuna Carbonara, too!

(serves about 3)
- 3 Eggs
- 4 tbsp Parmesan or Pecorino cheese
- 1 Red Onion, small
- 15 gr Extra Vergin Olive Oil
- 300 gr Zucchini, chopped
- 500 gr Water
- 280 gr Spaghetti
- Salt and Pepper to taste

Let's make our Zucchini Carbonara

Place eggs, cheese and a pinch of salt in the bowl. 1 Min. Speed 4. Put aside.

Rinse bowl and put onion in. 10 Sec. Speed 7.

Scrape down sides with spatula and add olive oil. 3 Min. 100º Speed 1.

Add zucchini 10 Min. Varoma Temp. Speed 1 Reverse.

Add water and a pinch of salt. 5 Min 100º Speed 1 Reverse.

Add Spaghetti and cook for the recommended time. 100º Speed Soft Reverse.

When spaghetti is cooked drain, add the eggs you had put aside earlier and cook. 1 Min. 100º Speed 1 Reverse.

Sprinkle black pepper and cheese on top.

My Advice

If you like, add bacon or a capsicum.
