Carbonara Recipe: Thermomix Zucchini Carbonara

This Carbonara Recipe is suitable for those who don't eat meat, as it uses zucchini instead of pancetta. Originally from Lazio (the region where Rome is) it is now popular all over the country and the world.

Ingredients

(serves about 4)

- 30 g Onion
- 40 g Extra Vergin Olive Oil
- 600 g Zucchini
- 600 g Water + one measuring cup
- Basil
- Salt to taste
- 320 g short pasta like pennette
- 4 yolk
- 30 g di Pecorino cheese + q.b. more
- 30 g di Parmesan
- Pepper to taste

Let's make our Zucchini Carbonara

Place 30 g of onion in the bowl. 5 Sec. Speed 7.

Scrape down sides with spatula and add 40 g of olive oil. 3 Min. 100º Speed 1.

Add 600 g zucchini chopped and cook 5 Min. 100° Speed Soft.

Add one measuring cup water, some basil chopped, salt and cook 15 Min. 100° Speed Soft.

Then 3 Sec. Speed 8.

Add 600 g water and boil 4 Min. 100° Antiorario Speed Soft.

Add pasta and cook for the recommended time. 100º Speed Soft Reverse.

In a pot, mix 4 yolk with 30 g pecorino cheese, 30 g parmesan, salt and pepper.

Leave the pasta 1 or 2 Min. in the bowl

Add the yolk with cheese and cook 1 Min. 60° Speed Soft Reverse.

Serve the pasta hot with some pecorino cheese and pepper.


My Advice

If you like, add bacon or a capsicum.
