Wild Berry Cheese Cake with Thermomix


- 250 g Biscuits (like Petit)
- 250 g Mascarpone (mild Creamy Cheese)
- 250 g Fresch Ricotta
- 120 g Unsalted Butter
- 2 Eggs
- 1 tablespoon Flour 00
- 7 tablespoons Sugar
- 1 Pinch of Vanilla Powder
- Juice of 1 / 2 Lemon
- 1 jar of Wild Berry Jam

How to prepare the Wild Berry Cheesecake

Grind biscuits. 10 Sec. Speed 7 + Turbo if needed.

Melt butter in a pan and then mix it with the biscuits. Use this mixture to make the base of the cheesecake.

Now prepare the topping.

Add the ingredients in this order: ricotta cheese, mascarpone cheese, sugar, flour, eggs, vanillin. Mix until you have an homogenous mixture. Speed 4/5.

Pour it on the biscuits base.

Bake for 35 Min. 180°C. Let cool.

In the meantime mix the jam with lemon juice.

When the cheesecake is cold cover it with the jam.

Keep refrigerated at least for 2 hours before serving
