Coconut Yogurt Cake with Thermomix

Coconut Yogurt Cake with Thermomix

Here's the recipe for Coconut Yogurt Cake with Thermomix: so simple so soft. It was given to me by Francesca from Rome, who wrote:

"Today I made a simple but tasty sweet. Basically I do not get along with sweets (for the preparation .. if it comes to eat them we agree more!). But since this cake seems to me pretty nice and hopefully good, I thought this recipe might be useful to people, like me, who have no particular talent for cooking cakes!

This recipe was kindly donated to me by Claudia, a dear friend, that I'm lucky to have as a relative! For me, Claudia is the queen of the cakes!!!

Whatever she does is soft, fluffy and tasty!

A few weeks ago my husband and I went to her and her husbands house to let them know our child. We were greeted with this wonderful cake, wonderfully soft and high ... My husband almost ate it all!

This is the recipe of Claudia that I adapted for Thermomix."

Francesca from Rome

Use a cup of 125 gr yogurt as measurement unit

- 4 Eggs
- 2 Cups Sugar (cane even if you like)
- 3 Cups Flour
- 1 cup of Olive Oil
- 1 cup Coconut Yogurt
- 1 packet of Yeast

How to prepare

Insert the butterfly in the mixing bowl.

Put in the mixing bowl eggs and sugar. 10 Sec. Speed 4.

Put the flour. 10 Sec. Speed 2.

Pour olive oil, yogurt and yeast. 10 Sec. Speed 4.

Grease the pan with oil and add the sugar (I used the cane). You need the sugar to make the crust.

Pour the mixture in the mixing bowl and bake in the oven almost hot at 180 ° for 20-30 Min. The time depends on the oven. The proof with a toothpick is always the best test! ;-) .

The Advice of Francesca

The butterfly remains always in the mixing bowl during the preparation of this cake. Actually with the new Thermomix (TM31) it is not necessary, but I think it is better to use it for the preparation of desserts because it kneads better by giving air to the mixture. So it yeast more!
