White Cake with Egg-Whites: make it with Thermomix



Would you like to use your leftover egg-whites preparing a cake? Then try this simple and flavoured recipe.

The orange zest scent, the softness given by egg whites and butter, makes this cake a soft dessert, healthy and easy to prepare, you may taste it in many occasions!

The recipe was sent by Procida Damerinda (from the province of Salerno) who writes "This recipe was born a few years ago, to dispose of some leftover egg whites of Easter preparations. It's a cake that can be eaten for breakfast, replacing orange zest with chocolate chips, or as a base for another cake. It's been a long time since I made the conversion for my Thermomix, so I am telling it to you. Hope you like it. P.S: You can find it in the new Italian cookbook "Il Meglio di Bimby" ("The Best of Thermomix"), because I posted it on the Thermomix official Italian bulletin board, the team tested it and, much to my satisfaction, it decided to put it in the book!!"

So you can eat it alone, dip in milk or tea, or use it as a base for another preparation or enrich it with chocolate chips, dry fruit etc....I already tested it for my children (and friends) afternoon snack, filled with Cherry Jam. Delicious!

Ingredients


- 250 g Pastry Flour
- 180 g Soft Butter
- 130 g White Sugar
- 5 Egg Whites
- 1 Baking Powder Sachet
- 2 Untreated Oranges
- 2 Spoons Icing Sugar
- 1 Pinch Salt


How to prepare the White Cake with Egg Whites


Put sugar and oranges zest in the mixing bowl while the knives are moving. 15 Sec. Speed 7-8.

Add butter. 30 Sec. Speed 4.

Put salt and flour. 40 Sec. Speed 4.

Add egg whites. 30 Sec. Speed 4.

Add baking powder. 30 Sec. Speed 4.

Butter and cover with flour a 24 cm baking pan and cook in oven. 30-35 Min. 160°C (fan assisted oven) or 180°C (static oven)

Once cooked, let it cool and dress with icing sugar.
