Lingue di Gatto Traditional Italian Biscuits Thermomix



They are called Lingue di Gatto (Cat's Tongues), but they are sweet biscuits. I think they are called this way because of their shape, flat and streched like a cat's tongue. These are traditional Italian Biscuits!

In Italy we use to eat them alone, or with ice cream. Try them with chocolate ice cream or with basic custard ice cream! These biscuits are also perfect with tea!

For those who prepare sweets, Lingue di Gatto are a must. Maybe not only for the biscuit itself but because when you make shortbread pastry, a lot of egg-whites remain. What can you do with them?

Here it is a very simple recipe for very good biscuits. I customized it, the basic recipe of the book includes 4 egg-whites. As a matter of fact when I prepare the Jam Tart, 5 egg-whites remain. So I modified the amounts.


Ingredients


- 5 Egg-Whites
- 150 g of Butter
- 120 g of Sugar
- 190 g of Flour
- 1 tsp of Vanilla Sugar
- 1 Baking Powder Sachet
- 1 Pinch of Salt


How to prepare Lingue di Gatto


Put all the ingredients in the mixing bowl of your Thermomix. 1 Min. Speed 5-6.

With the spatula, place this mixture on a baking pan covered with greaseproof paper and shape in very thin stripes.

Cook in the oven at 160°C until they are lightly browned.


My Advice


As they contain baking powder, they tend to increase in size during cooking. It's better if you place the mixture on the baking pan keeping a little bit of space between every biscuit.

Once cooked, you should wait some minutes before you take them. They harden while cooling.
