Lingue di Gatto Traditional Italian Biscuits Thermomix

They are called Lingue di Gatto (Cat's Tongues), but they are sweet biscuits. They are called this way because of their shape, flat and streched like a cat's tongue. These are traditional Italian Biscuits!

In Italy we use to eat them alone, or with ice cream. Try them with chocolate ice cream or with basic custard ice cream! These biscuits are also perfect with tea!

Here is the recipe for Thermomix cat tongues, sweet tea biscuits that owe their name to their flat and elongated shape that reminds a cat's tongue :-)

In Italy we also call them mother-in-law's language! Made with flour, butter, sugar and egg whites, for those who cook sweets, cat tongues are a must. Perhaps not so much for the biscuit itself, but because when the shortcrust pastry is made, the egg whites always advance. What to do with it?

Here then comes to the rescue this easy recipe, with which you can take out some really delicious biscuits, a jolly of the tea pastry shop to personalize as you prefer!


- 100 g caster sugar
- 100 g butter
- a 1 tsp of vanilla sugar
- 100 g egg whites
- 100 g plain flour

Let's cook

Put 100 g caster sugar in the mixing bowl, place the measuring cup and icing for 20 Sec. Speed 10.

Add 100 g butter and a tsp of vanilla sugar and make it soft by mixing 10 Sec. Speed 4.

Add 100 g egg whites and 100 g plain flour and mix 10 Sec. Speed 4.

Put the mixture in a sac à poche with a 10 mm smooth nozzle.

Create a series of sticks about 10 cm long on a baking sheet lined with backing paper.

Cook in a preheated oven 8 Min. 190C. The edges of the biscuits must be slightly brown.

Take out the biscuits and leave to cool before serving.


You can give a round shape to the biscuits as soon as they come out of the oven and are still hot and malleable. To do this, just handle them with care or place them on top of a rolling pin.
