Do you need a make-ahead mirepoix mixture? With Thermomix you can prepare an excellent mirepoix to season your savoury dishes and give them a special taste.
Mirepoix, is one of the classic French preparation ingredients found in many classic dishes and still used today.
The traditional mirepoix contains; onions, celery and carrots which are very healthy and very easy to find ingredients.They are usually in a ratio of 2 parts onions, 1 part celery and 1 part carrots.
Onions, celery and carrots in this combination are aromatic vegetables and also known as the Holy Trinity of French cooking since they are the cornerstone ingredients of the cuisine.
The Italian version of mirepoix is called Soffritto (not to be confused with the Spanish sofrito).
An Italian soffritto is made with olive oil rather than butter, as in France, and may also contain garlic, fennel, leek, and herbs. For example Tuscan soffritto is garlic-less and simply calls for a red onion, a carrot, and a stalk of celery all finely minced by hand and slowly and carefully sauteed in virgin olive oil in a heavy pan until the mixture reaches a state of browning appropriate to its intended use.
You can use this mixture instead of the traditional "soffritto" when you're in a hurry and you don't have fresh vegetables at your disposal. Or you can use it in the making of stocks, soups, sauces, stews or even roasts and everything you like.

This mixture is not a real mirepoix, but you can use it for the same aids.
For its preservation you may use the same method used for the Vegetable Stock Cube. You can keep it refrigerated for three months and you can put it in the freezer.
Ingredients
- 1 Medium Size Onion
- 200 g Celery
- 200 g Carrots, peeled
- 100 g Coarse Salt
How to prepare the Make-ahead Mirepoix Mixture
Put all the vegetables in the bowl. 10 Sec. Speed 7.
Add salt. Incline the measuring cup and cook. 20 Min. Temp. Varoma Speed 2.
Blend. 1 Min. Speed Turbo.
If it results too much watery, cook until it becomes thicker at Temp. Varoma.
Maria's Advice
Since this mixture is very salted, you can use it in alternative to salt. Then if salt is still needed you can easily add it at the end of the cooking. ;-)
