Stuffed Aubergine Rolls with Thermomix



Here is a delicious recipe for some yummy Eggplant Rolls stuffed with Meat.

The Varoma cooking makes this recipe very light. You can also dress the rolls with some tomato sauce if you like!

Ingredients


- 250 g Minced Meat
- 50 g Grated Parmesan Cheese
- Parsley
- 1 Tsp Thermomix Stock Cube
- 40 g Extra-Virgin Olive Oil
- 1 big Eggplant
- 400 g Tomato Pulp
- 1/2 Onion


How to prepare the Stuffed Aubergine Rolls


Put parsley in the bowl. 5 Sec. Speed Turbo.

Add minced meat, parmesan and the Thermomix Stock Cube. Mix. 30 Sec. Speed 3.

Cut aubergines into thin slices.

Shape the meat mixture into many small balls and use them to fill the aubergine slices. Roll up the aubergine slices around the filling and lock with a toothpick.

Place the rolls on the Varoma tray and dress with oil and salt.

Cook oil and onion in the bowl. 3 Min. 100°C Speed 4.

Add the tomato pulp and salt. 35 Min. Temp. Varoma Speed 1 and place the Varoma tray after the first 5 minutes. Turn the rolls during the cooking.

At the end of the cooking, place the rolls on a serving dish and dress with the sauce cooked inside the bowl.

Katia De Girolamo, an Italian fan of the Italian version of this website suggests: "Cook the aubergine slices in the Varoma tray for about 10 minutes. They will become softer and easier to roll up; if uncooked they tend to break".

Add an aubergine cut into cubes and cooked for 10 Min with a bit of oil. Mix it and add it to the ground meat. It makes the aubergine filling creamier and tastier if you can't add the parmesan cheese.
