Thermomix Mini Pizzas with Zucchini and Cherry Tomatoes



Do you need a tasty idea to prepare using Pizza Dough? In this recipe I suggest you try some Mini Pizzas with Zucchini and Tomatoes. They are "tricolour" mini pizzas, like the three colours of our Italian flag.

Very easy, colourful and delicious. There are our colours: the WHITE dough, the RED tomato and the GREEN zucchini. One leads to another. So it is when it comes to mini pizzas! :-P

I prepared them during the last Italian match of the world cup for some friends who came at home. A treat you can eat as a salty break. The guys wolfed them down while watching the match. Only after the match they said "the tricolour mini pizzas were a very nice idea" :-) I think they liked them because there was no one left...

If you want to try other "tricolour" recipes with zucchini you can prepare the Round Zucchini in Batter as starters, the Zucchini, Speck and Fontina Cheese Pasta Sauce as first dish and the Stuffed Round Zucchini with Stracchino Cheese and Pancetta as second dish.


Ingredients


(about 25 mini pizzas)

- 1/2 dose Pizza Dough
- 1 Zucchini
- 10 - 15 Cherry Tomatoes (we use the Pachino variety)
- Extra-Virgin Olive Oil
- Salt to taste





How to prepare Mini Pizzas with Zucchini and Cherry Tomatoes


Prepare the pizza dough and use half of it. You can make other mini pizzas with the other half, as you like.

Roll the dough out and create many small discs. You can use the thermomix measuring cup as a cutter ;-).

Cut zucchini into very thin rounds.

Cut cherry tomatoes in half or into three.

Put the disc of dough in a baking pan and place a round of zucchini, a piece of tomato, oil and salt on each disc.

Bake at 220°C until they are lightly golden browned.

You can serve them hot or cold.
