Have you got peppers and zucchini in your fridge? Would you like a new recipe to prepare them? Try these Zucchini and Peppers Filled Crêpes.
I go crazy for crêpes. I prepare them very often! They are nourishing (eggs, milk) and taste delicious. I eat them sweet filled with jam (like the plum jam or the strawberry jam or the cherry jam), or salty (like the White Mushrooms Crêpes).
This time I had peppers and zucchini and I didn't want to prepare the classic peperonata. So I created this dish. At the end it was a mouth-watering second dish you can also eat at room temperature (since it is too hot these days...).
Another second dish you can prepare with eggs is the Egg Tripe. Many of you could be scared by the word TRIPE. You immediately think of a greasy thing, fatty I'd say, and heavy. But it is only the name. Actually it is a complete and healthy dish. Nothing more than a luscious omelette with tomato sauce on it :-))). Try it and let me know!
Ingredients
4 people serving
for the filling and the topping sauce
- 1/2 Onion
- 40 g Extra-Virgin Olive Oil
- 250 g Zucchini (about 2)
- 250 g Red Peppers (about 2)
- salt to taste
for the Crêpes
- 250 g Milk
- 100 g Flour
- 20 g Butter
- 2 Eggs
- 1 Pinch Salt
- Olive Oil to fry as much as needed
How to prepare Zucchini and Peppers Filled Crepes
Put onion in the bowl. 3 Sec. Speed 7.
Add oil. 3 Min. 100°C Speed 1.
In the meantime cut zucchini and peppers into small cubes.
Put them in the bowl with salt. 12 Min. 100°C Reverse Speed Gentle Stirring.
Remove 3/4 of the vegetables from the bowl and put aside. Mix the remaining 1/4. 15 Sec. Speed 7. Put aside this sauce in another bowl.
Prepare the crêpes batter.
Put all the ingredients in the Thermomix bowl. There's no need to wash the bowl! 30 Sec. Speed 5.
Prepare crêpes with this batter in a frying pan with oil. You might have 4-5 crêpes.
Fill your crêpes with vegetables, close them in a triangular shape, put them in a oven dish and dress with the vegetable sauce you made before using 1/4 of zucchini and peppers.
Cook in pre-heated oven. 15 Min. 200°C.
My advice
For children who don't like finding and eating vegetable pieces I suggest you mix the filling too....my experience teaches :-))))
